  • Recipe 1: Eggplant Meatballs
    Ingredient
    For the meatballs
    2 eggplants
    30 g of wholemeal flour
    20 g of Parmesan
    100 g of breadcrumbs
    oil
    salt
    pepper
    For the gravy
    1 clove of garlic tomato puree
    basil
    Method
    Mix all the ingredients, form meatballs and cook in the oven for about 40 minutes at 180°C
    Recipe 2: Quinoa Salad
    Ingredients (for 1 person)
    1/2 cup of quinoa
    frozen peas
    precooked chickpeas
    valerian
    extra virgin olive oil
    salt
    spices (optional): use the ones you like best
    Method
    Cook the quinoa according to the instructions on its package. Cook the peas in hot salted water.
    Finally mix all the ingredients. To make it richer you can add the vegetables you prefer.
    Recipe 3: Baked Potatoes
    Ingredients
    Potatoes
    Oil
    salt
    Sweet paprika
    Clean and cut the potatoes into cubes. Season with oil, salt and paprika and cook at 180°C for about 40 minutes.
    Recipe 4: Baked cherry tomatoes
    Ingredients:
    70 g of cherry tomatoes
    25 g of Greek yogurt
    50 g of spreadable cheese
    1 clove of garlic
    juice of 1/2 lemon
    poppy seeds
    extra virgin olive oil
    pepper
    Method
    Wash and arrange the cherry tomatoes in a baking dish together with the grated garlic, salt, pepper and oil.
    Cook at 220°C for about 20 minutes.
    Meanwhile, mix the Greek yogurt and cream cheese, add the juice of 1/2 lemon.
    Recipe 5: Scrambled Eggs
    Ingredients:
    2 eggs
    1 spring onion
    salt
    coconut oil
    spices to taste
    Method
    Clean and cut 1 small onion. Fry it lightly in coconut oil and add the previously beaten eggs. Let it cook and stir occasionally to get the scrambled effect.
    Recipe 6: Ice cream and kiwi dessert
    Ingredients
    Digestive type biscuits
    Butter
    Ice-cream
    Fruit to taste
    In this case I did everything by eye!
    Method
    Grind some biscuits until you get a very fine consistency. Add the melted butter until you get a compact layer. Put in the freezer. Before serving, add ice cream and fruit to taste.
