Jester Leslie doesn't win if Crew Bars wins via voting out all imposters. Imposter Toast obviously wasn't going to vote for himself, and Crew Bars was going to vote for Imposter Toast. So Jester Leslie needed Imposter Toast to vote for her in HIS hopes Crew Bars was somehow convinced Toast was trolling and not actually imposter, or that he votes randomly for one of them and it lucks out on landing on her.

Marketing. The more viewers a stream has, the more the streaming platforms push it, making them get even more viewers. A "rich get richer" situation. Since Toast doesn't stream on Twitch all the time, he can use his account there while he doesn't to give views to the other streamers, increasing their viewcount and thus the amount Twitch will push their content, by some tiny amount. Frankly, it's just common decency to "watch" a stream by one of your friends if you have no max bandwidth and aren't using the account at that moment.
