    Good stuff. Followed this similarly and turkey came out great. Did the same with the drippings for the gravy and came out a bit more Smokey than expected. May use less of the liquid and mix with the turkey broth made earlier.

    The turkey turned out nice with a nice color on it. I miss cooking on my WSM, one achieve great bbq cooks on it. Just one note, after you add flour to the broth, it takes a long time for the flour to fully cook, otherwise it will be difficult to digest. I would either add cornstarch slurry or better yet a roux.

      I like a roux better but this drippings was lacking fat in it, so I went with slurry and it was cooked for a while 💯💯💯it’s just magic of editing. It seems like it was a couple seconds.       none this time... I usually add some pecan or oak for some smoke flavor

      basic brine is just equal part salt and sugar,
      this particular one has a bunch of spices that are optional
      pepper, cumin,fennel,ginger,turmeric,mace,cardamom,cinnamon,mustard seeds, coriander ,fenugreek and a bunch of fresh herbs
