  • Berry Spoon Cake Recipe - Simple After Dinner Cake - Glen And Friends Cooking
    This cake is so simple and can be made with any combination of in season or frozen fruit that you have on hand. The cake recipe comes together in no time, and can be made after supper if you're feeling like you need a little dessert.
    Ingredients:
    500 mL (2 cups) blueberries
    500 mL (2 cups) raspberries
    300 mL (1 ½ cups) sugar
    250 mL (1 cup) flour
    5 mL (1 tsp) baking powder
    Pinch salt
    4 eggs
    15 mL (1 Tbsp) orange zest
    15 mL (1 Tbsp) oil
    5 mL (1 tsp) vanilla extract
    Method:
    Preheat oven to 180ºC (350ºF).
    Grease a 9”x13” baking pan.
    Pour the berries into the bottom of the pan, and sprinkle with a bit of the sugar.
    In a bowl mix together sugar, flour, baking powder, and salt.
    Stir in the eggs, oil, zest and vanilla, until smooth.
    Spoon over the berries and then bake for about 20 minutes.

    This looked so good, I had to do it for dessert tonight. I had 2 fresh peaches and fresh blueberries on sale today. I used lemon zest. Baked it in 8x8" pan. 35 minutes. Wish I could share photos. It is so good. Eady , quick, and delicious. What more do you need?

    This looks like a Dump Cake... I have only ever seen dump cakes made with boxed cake mixes and canned fruit compotes... this is exactly what I need... an all natural dump cake

      It's not a dump cake because you mix everything together. The point of a dump cake is you dump everything in and cook with no mixing.

    My grandparent's had a dairy farm in Michigan. We would have just put some fresh cream on it and called it great!

    4:36 Glen didn’t pretend it was difficult, but it makes me think of the rice crispy commercial where the lady makes rice crispy bars and puts flour on her face and pretends it’s a huge effort to make. Hehe
    Great cake idea. I’m not a cake person, but that looks delicious.

      Just needed to melt some butter first, right? My Dad's family always called it "hillbilly pie", but it's the same recipe.

    Thank you for sharing this recipe. I have a grandson that is Dairy free. I made this with strawberries, blueberries, & raspberries. After it cooked for 20 minutes I added Sprinkles and baked for 5 minutes longer. He is 6 and loved it.

    So what would happen IF, you doubled the batter and put half on the bottom the fruit in the middle and then cover it with the rest of the batter?

    Very much like cottage pudding.
    Hint: defrost frozen fruit in the microwave. Strain. Depending on the quality of the juice, reduce and drizzle over the fruit.

    My mom used to make something like this. She said she learned it in England where she worked as an aupair for a year. Equal parts (6 spoons?) of melted butter, self-raising flour, eggs and sugar with vanille-sugar ( well, we did less sugar)
    Apple slices in a baking tin/bowl whatever, put mix on top, bake.
    It was our go to midnight cravingsbake. If we had icecream or whipping cream, not whipped stiff, we would use it haha. Thank you Glen!

    I'm sure you've heard it a million times already, so I'll just toss my hat in as voice 1 million and one. Please compile a cookbook of the various recipes you've done over the years. You could do several volumes.. Historic Recipes, Depression Era, Cocktails, etc. With nearly 600k subscribers I'm sure you'd sell more than a few. :)

    Looks like my great-grandmother’s oil cake, however hers had more oil and only one egg. The recipe doesn’t call for fruit but I will often add raspberries or stewed rhubarb at the bottom.

    What is your opinion on homemade vanilla vs store bought. I use both and personally cant really tell a difference unless i use more beans than I'm supposed too. I just wanted your take on it if it even matters. Thank you very much in advance.

    That cake looks great! IMHO it would only look pretty upside down if you carefully arranged the fruit in the pan before adding the batter.

    How much does a cup of flour weigh? I’ve seen anything from 120g to 150g!

    Glenn, I love this type of cake and made it the next day. The cake came out beautiful but the egg taste overpowered the berries. I chucked that one out and made it again even adding a few drops of orange extract along with the zest. Again the egg flavor was too pronounced. Is there a way to make this type of quick fruity cake with fewer eggs?

    that looks amazing. I was thinking that it could be a nice addition to make some kind of crumble to put on top of that, and treat it like a coffee cake. Not sure how you'd make such a crumble, but there you go :).

      It was fantastic.
      I increased the cake batter by 1.25 and it filled the 9x13 perfectly.
      In my oven I had to increase the cooking time to 40 min.

    Made this tonight with blueberries just past their best, lemon zest, whole wheat flour, flax and a little cinnamon in the batter. Perfect finish for our meatless Monday dinner.
    So good!

    That's very, very similar to the Fannie Farmer cobbler. It's a favorite around here, especially with a really good vanilla ice cream.
