I have a question, when you boil the pork belly, do you put it on the water when it's still cold and wait it for an hour, or you put it when the water is hot already and wait it for an hour?
I'm Thai, and judging from the amount of fish sauce I put in it, I'm sure it's very salty. Normally, Thai cooking tends to put various seasonings a little at a time and taste if you are not skilled enough.
