My initial thought as well. You're really fighting the symptoms here, not the cause of the discomfort... This would be the solution if your position is dialed in, but because of physiological issues, you can't find a saddle which suits you. Or you're constrained by sponsorship/contractual stuff. This video seems to be an ad for the Fizik saddles too, imho, while not clearly being marked like one.
If you ever look in the mirror you will probably notice that your ears are not actually level, which is an easy example of how asymmetric people are. I am sure this could be a game changer for some people, nice to have for some people and not at all necessary for others. It is nice that the option is out there.
The Idea of adjusting the density of the saddle to the pressure is really remarkable. This example of different leg length is really poor. Different size cranks for left and right leg would be the correct approach.
The padding density provides frition so you don't slide around. It is not there primarily for comfort. I perfectly fitting saddle requires no padding. Your bib shorts have padding.
So Phil is suggesting to buy a £500 saddle instead of installing £30 worth of cleat shims, heel wedges and or forefoot wedging to align your pelvis and get you functioning more symmetrically on the bike? Makes sense..
No, he's not. Nothing he said suggested these are mutually exclusive. Wanna try? Put on your wedges and shims and ride the wrong saddle and ask yourself again whether a saddle matters if you got shims and wedges.

Nope 👎on the saddle. Also difficult to find a fitter that doesn't want to sell you bars, shoes, saddle, stems etc. Would be interesting to have a bike fit then approach another fitter for a fit and see what they say.
I've got the Fizik 3D printed saddle when it was first released. It was waste of money. I got a Prologo for half the price and it is better and lighter. (The Fizik saddle has dropped in price since I bought it when it was first released) 3D printed saddles are an example of over engineering.
