How to make Roast beef〜Miki’s Kitchen〜

    When I get a chunk of beef, I often roast it. A tip for making it nice and savory is to roast it twice, before and after low-temperature cooking. I’m going to show you how to do that.

    ~ingredients for 4 servings~
    300g of round roast
    3g of salt
    Black pepper
    1 tbsp of olive oil
    (garlic sauce)
    2 pieces of garlic
    1 tbsp of olive oil
    2 tbsps of mirin
    2 tbsps of sake
    2 tbsps of soy sauce
    1 tbsp of honey
    ~Directions~
    1. Sprinkle salt and black pepper over the roast and let it stand for about 1 hour at room temperature.
    2. Heat a pan on medium heat and put olive oil in it. Place the beef and roast it.
    3. When the skin is slightly burnt, take it out.
    4. Cover it with cling film and put it in the plastic bag.
    5. Put it in hot water, the temperature is around 60 degrees centigrade.
    6. Keep the temperature for about an hour. Sometimes add boiled water and keep the temperature.
    7. Take the roast out of the pot and cool it.
    8. When it gets cool, take it out of the bag and cling film.
    9. Make sauce. Peel and slice garlic. Heat a pan on medium heat, and place olive oil and garlic.
    10. When the garlic gets crisp, add mirin, sake, soy sauce, and honey in the pan, then heat until the sauce get thick.
    11. Roast the beef again. Heat a pan on medium heat and place olive oil in it. Place the beef and roast the surface.
    12. Take it out of the pan and cool it.
    13. When it gets cool, slice it. Serve the roast beef and pour the sauce.
