When I was a child growing up in Mississippi in the early 80s my brother, my dad and I would go rabbit hunting at night and we ate wild rabbit at least twice a week to make ends meet. My mother would fry it up with white rice brown onion gravy and biscuits just like you have in the picture and that is one of my favorite memories. You took me back to the best days of my life. Farm raised rabbits cost that much because they're expensive to raise and fatten up that big. That's why they were never really domesticated. I tried raising rabbits once and it was too much of a hassle and too expensive. A hog is way cheaper to raise up for market. But definitely get them rabbits in your pasture. Free meat is good meat, especially if you drown it in good brown gravy like that. I've never had rabbit fried, usually just in a stew, but that looks pretty good.

Rabbit is a lot like chicken but firmer and less fat. I can tell you that for $40 you could feed a doe & buck and a litter. Great job, I haven’t tried soaking it in buttermilk yet. Next time I will have to try it. We use the chest/breast area for bone broth but not really anything else because there isn’t much meat on that area and there are sooo many small bones. Thank you. ❤

Addition of the gravy mix is pretty good adds that dark gravy color. Got a rabbit in the freezer this is next recipe. Thanks. Next time get that man to chop it with a clever and garden shears.

My Lord, Mrs. Mattie, new sub, came to see you do oxtails... I tried rabbit once in Italy, it was sort of shredded and prepared by a chic pop chef. I really didn't like anything about it. Only dish in Italy I couldn't eat.. I am looking forward to trying it this way, looked amazing
You did a very good job when you cutting your rib bones break them first then cut it don't try to cut through the bone that would make it a lot easier but very good job on that great and seasoning and coating the rabbit I bet it was delicious
With all due respect beautiful Mattie, you should invest in a rubber mallet, cleaver, and wooden cutting board. That will let you chop away and cut like you want it. Yes, rabbit is a lean meat and good for us.
