@@sameenfatima143 Real shah zeera is black in color and demand a hefty price tag whereas sometimes normal white zeera darkens in color and is also sold as kala zeera or shah zeera. I would recommend you buy shah zeera from a reputed super store for the first time. This way you can analyze and memorize the shape form and aroma of shah zeera. It has a stronger taste than white zeera.

bhaijaan i have neverseen you pressure cooking red meat.most of the videos have atleast time consumption of atleast one hour.does it taste better than pressure cooked red meat mixed with gravy.if we cook for long time wont it take more gas usage in restaurants.please answer when u r free thanks from kerala india
its ok to pressure cook red meat. the problem is when we pressure cook the bones. when pressure cooked, the bones give a metallic taste to the gravy which is not pleasing. Either use boneless red meat to pressure cook or cook in conventional vessels for best results.

I prefer chuck but you can also use round eye. I prefer using lean cuts
Are there any tips of reheating of handi, since we are adding cream and we might have some leftovers?
Mix a little water in the gravy and just heat it up enough to bring to a boil but try not to boil it. boiling will split the cream

I think the grated/crushed ginger & garlic will give a body to gravy. The paste would just melt away.
It has more to do with aroma than texture.
