    250 g urad dal (soaked for at least 4 hours)
    100 g maida (all-purpose flour)
    50 ml curd (yogurt)

    Salt to taste
    Oil for frying (1 liter)
    *Instructions:*
    1. *Prepare the Batter:*
    Drain the soaked urad dal and blend it to a smooth batter. You can add a little water if necessary, but keep it thick.
    In a mixing bowl, combine the urad dal batter, maida, curd, jeera, and salt. Mix well until everything is incorporated.
    2. *Heat the Oil:*
    In a deep frying pan or kadai, heat the oil over medium heat. You can check if it's hot enough by dropping a small amount of batter; it should sizzle and rise to the surface.
    3. *Shape the Wadas:*
    Wet your hands or use a wet sheet of plastic. Take a portion of the batter, shape it into a small disk, and make a hole in the center. You can also use your fingers to shape it directly into the oil.
    4. *Fry the Wadas:*
    Carefully slide the shaped wada into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy on both sides, about 4-5 minutes.
    5. *Drain and Serve:*
    Once done, remove the wadas and drain them on paper towels to remove excess oil.

    Serve hot with sambhar and coconut chutney for a delicious combination!
