Vr is really the point and speed at which you rotate (lift), but V1 will appear on the PFD and/or audio notification simultaneously. V1 and Vr are normally very close, so the tendency is to rotate immediately after v1 passes. Note V1 is the speed at which you cannot abort the take off, while V2 is for taking off safely, if you have enough runway 😊. Anwyas, peace and all the best!
You are right. Its a mobile phone GPS which is accurate to about 1m-5m. So its technically lagging behind the actual speed of the aircraft as it continuously accelerates. The plane is probably faster when it starts rotating at 250kph shown on the phone
Even in air plane mode your phone is able to receive GPS signals. Air plane means your phone stop emitting on any frequency like GSM, LTE, G5, Wifi or Bluetooth but does not prevent receiving GPS because receiving GPS signals does not disturb anything

Well for those wondering airplanes take off at around 140 - 170 knots and can reach around 320 - 390 knots which is around 800 - 1200 km/h ground speed
in a B737-800 that is usually not the case, variying around 145kts IAS for V1. It is very important to pay attention to the IAS ( indicated airspeed ) this is the speed is relative to the wind. But what he is measuring in the video is ground speed, the speed relative to the ground, which you cannot directly convert to the Vspeeds ( IAS speeds ) without wind data. Also, there is never a fixed V1, VR or V2 speed for a specific aircraft type: it varies with the payload and fuel mass, where the center of mass is located at the time of take off, the runway length, the weather ( winds ), the runway condition ( wet/dry/... ) and has to be precisely calculated by an app that Boeing gives us pilots that takes in all these parameters and outputs not only a V1, VR, and V2 speed, but also a selected temperature for takeoff derrating ( look it up on Google ).

There is no exact speed, since every other flight has more or less kerosene and weight. There is always a take-off point, sometimes at 140 knots for example.

Knots is what pilots use. I'm a 737 and A320 sim pilot, We takeoff (rotate) at somewhere around 140 knots.

Airspeed is unrelated to groundspeed: aviation 101. The pilots are paying attention to the airspeed indicator
