I’m a year into my sourdough journey and like you have been finding some great (and not so great) tips and tricks. Some have been trial and error as well. One thing that I found to work out very well for me when it comes to storing and slicing my loaves is to let them sit on a cookie rack until cool to the touch, then put each one in a zwilling large bag and vacuum seal it and put into the freezer. When I’m ready to use, I let it defrost the night before in the fridge and in the morning slice up the loaf. I have found it to be so much easier to slice nice even sized slices. I had purchased the zwilling storage system during Black Friday one year, and it’s been one of the best investments I’ve made!
Love that idea! We don’t bring out our vacuum sealer often enough! In the past I always froze our bread from the store because we don’t live very close to town for groceries so I need to get into the habit of freezing my homemade breads too! I just stir in the hooch and feed it a couple days and it's very active and ready to go. A couple days ago I madeean artisan loaf, some discard rolls, some crabapple butter rolls and a banana bread. Trouble... aka my sourdough starter, is now resting back in my fridge until I want to use him again. Love it! Sometimes when I make sourdough sandwich bread if it's ready to bake but my schedule just doesn't allow right then, I place it in the fridge and bake a little later when I have the time. Our refrigerators are great tools for sourdough, a convience our ansestors didn't have. Loved your video!

To feed my starter? I eyeball it a lot… if I have half an inch in the bottom of my jar I’ll add the same amount in flour and water and stir it up. To be more accurate at times I’ll measure out 100grams flour and also add 100grams water. Hope that’s what you meant ❤️
Ive been trying to build a healthy sourdough starter for months now and i finally was able to make one, but when i used it in a recipe it didn't do anything, the loaf ended up being dense and chewy and never rised. Do u have any sourdough starter tips or any idea why this might have happened?
I’m guessing maybe you didn’t use your starter at its peak? 🤔 I like to feed mine after lunch so it’s at it’s peak around dinner time (in the winter 4 hours later, sometimes sooner) so I can pull my bread dough together for the night. If it’s any encouragement to you, I also had some dense loaves in the very beginning (and fed them to my chickens 😆)! Keep trying, troubleshooting and experimenting, you’ll get better and so will the strength of your starter! ❤️👏
I have a large Tupperware container that I store mine in. It’s sealed nicely that way (always make sure it’s fully cooked first so there’s not excess moisture) I’ve seen bread bags but never have tried those 🤷♀️ In general the loaves won’t last but maybe a week BUT you can also slice and freeze, makes for easy toast later on! If I find a better solution I’ll be sure to share ❤️
Ok I've had my starter for almost 10 years and still don't understand the concept of "too much" discard. I just feed my starter, wait till bubbly, and then use. Feed again and stick back in fridge. I've never discarded or thrown away any. If the starter is getting big and looks like it may go over the top of my mason jar, I feed it less before using, so it doesnt get too big. What am I missing?? What is too much discard, and why do people discard or dump out starter?
I don’t think you’re missing a thing, you have 9 more years of experience than I do! Lol! I should be clear, I don’t throw any discard away, I just use it for recipes that require less rise when it’s not as active (like pancakes and muffins) and once it’s fed I use it for breads! What I’ve witnessed is a happier starter when I can use more of it, feed it more quantities and let it grow from there. Hope that all made sense. Thank you for watching ❤️

Try not to put to much flour when rolling your tortillas, so, and get some grip and you’re able to roll them thinner, also, give yourself plenty of space to roll them. No need to grease your pan.
Great tips, thank you! I usually don’t use this much flour as I like to roll them onto wax or parchment paper. If I get them any thinner on my counter alone I have a hard time transferring them to my pan without tearing them 😬

How do you store your loaf throughout the week? That is my hardest thing. It dries out, it grows colors ewwwww. What is the best way to store it?
