    2lbs Sweet Potatoes
    1 Cup Melted Butter
    3 Cups White sugar
    3 Eggs
    1 tsp each Nutmeg/Cinnamon/Allspice
    pinch of salt (to taste)
    2 tbsp flour
    2 tbsp brown sugar
    1 cup whole milk
    1/2 tsp each of Vanilla Extract, Butter Extract, and Lemon Extract
    1 tsp Fresh Lemon Juice
    2 Deep Dish Pie Shells
    Directions:
    Roast potatoes in 350 degree oven for 45-60 minutes or until fork tender. Allow potatoes to cool until they are safe to handle and add potatoes to a mixing bowl. Mix potatoes for 3-4 minutes on low and then medium until potatoes reach mashed potato consistency. Add melted butter and milk and mix to combine. Add nutmeg, cinnamon, and allspice, flour, brown and white sugar and vanilla, lemon, and butter extract. Taste as you go and adjust as needed. Start with half of the sugar and add as much as you feel you need based on your preference. Add in the fresh lemon juice and mix to combine all ingredients. Ensure that you taste the mixture prior to adding your eggs. Once the flavor is to your liking, mix in your eggs. Prep your pie crusts to package instructions and fill them with your pie filling. Bake at 350 for 90-110 minutes or until it registers 175 degrees internal temp and the center has a slight jiggle to it. Allow the pie to rest for at least 2 hours before slicing.
