Continuous boiling will make the milk thick (we do that only when we have to make Indian Home made milk sweets or desserts..lol) So once it reaches the surface, it means it has reached its boiling point & its as good as boiled..also high flame might burn the milk from the bottom of the vessel & ruin the taste.. Next time you boil milk, add 2 spoons of lemon juice to it. You will get paneer or as you say, cottage cheese 🧀 .
