    Hi Sid just found your site today and find it very informative actually I'm missing Scotland v France on tv as I am watching your videos. I am definitely going to try hot water pastry with some pork pies. Nice to see a master baker at his work. Look forward to trying your recipes. Thanks Emmet

      Just finished watching your videos some of them. Missed the first half of England v Wales but I am going to watch the second half. But I have to say we're not watching the winners of the six nations or championship today. Being Irish I'm not being biased. Loved your videos so far. Look forward to trying some of them. Emmet

      Hi Harry. Thanks for watching. Scoring the top is a personal choice. It doesn't really add or take away from the product. It's purely a visual thing. I hope you enjoyed the video.

    I make sausage rolls with my own home made puff pastry, and never ever have I used bread crumbs or paxo to soak up moisture in other words fat out of cheap sausage, and then you added water,,, to bind it together ,no seasoning what so ever no sage parley caramised onions nothing and a piping bag omg so bad

      Thank you for your comment. My recipes are designed for the hard working people out there who may be finding it hard to make ends meet. But who still want the enjoyment of baking there own products. My Bakery worked on a similar principle of good fresh products at a price that working class people could afford.
