I think sometimes it could be alkohol (too much margaritas! haha, seriously, David Grohl even said „they like to drink in a little while”, soo...), BUT mostly he’s messing with us, fans, doing all this crazy shit on stage, he’s having fun of doing it and people overreacting about it
