    I have the classic and the right side is always a bit cooler than the left too. I just rotate them halfway through and add 15 minutes at the end of each step.

    Since you are using the probes for surface temperature monitoring and you are seeing a temp difference from one end to the other end I am curious what your probes were reading to reflect the ribs internal temps

    After the wrap, I like leaving the bottom foil on for the juices and it helps keep the flavor on them.
    Good looking ribs though.

      This seems to draw out the last hour to reach that 185 but I hope it does improve flavor

    I believe the temp might be higher on one side because of the angle of the heat distribution plate being closer to the grill on one side. I might be wrong. I just got mine yesterday.

    I basically followed how yall did it to a T, with different rubs.... My first time ever cooking ribs or even using my pit boss. They were the best ribs i had ever eaten and everyone at the bbq thought the same! keep em coming, next up is brisket!

      On the pitboss with the sear plate we don't wrap with foil because it would be a problem moving the plate. I havent seen a good implementation of this nor have we tried just easier to clean your machines more often.

      Use apple juice and not until at least an hr in and not so much as to where your washing the rub off.

    I found an excellent way to smoke ribs that come out flavorful, juicy, and fall off the bones, yet still have chew. Season with favorite rub, 220 on the Pit Boss laid on the top rack with a pan of water and apple juice underneath. 2 hours at 220, then take them off the top rack, raise the temp to 250, make a foil boat and put the ribs and 1/2 cup each water and apple juice and seal it tight with more foil, put it back in the PB for 2 more hours. When done, coat with your favorite sauce and put on the PB @ 350* for about 15 minutes or until the sauce has become a nice glaze. MMMM had it last night in fact. So stupid simple to do ribs on the Pit Boss. Of course we only do one rack since it is plenty for us, so the top rack works great, but for more than 2 racks, have to use a different method. Last night was one rack of bb, and 6 beef short ribs, smoked and braised in apple cider vinegar and apple juice. done in 4 hours 15 minutes. Yum. Love the Pit Boss!

    I have a pit boss pro and have the exact same heating issues, the left side will cook faster than the right side

      i have the pb1100. i did ribs this past weekend and the right side cooked faster than the left. when i had the Pit Boss Classic model, the left side of the grill cooked faster than the right. overall tho, i am very pleased with PIT BOSS GRILLS. I'll never go to another pellet grill company. #Pitbossnation

      RollinAssassin I have the pit boss classic and I’ve not had a single issue in two years. I’ve smoked meat for 6 hours several times and she works great every time.

      Pitboss competition Blend and fruit blend all the way! Pellet smokers are amazing! If you need more bark, then spritz it every hour with water

    I brush the glaze horizontally not vertically with the grain of the ribs...then proceeds to go vertically lolol. Still an awesome vid guys

    On the 3-2-1 method do you turn the smoker to smoke for 3 hours then up to 250 wrapped for 2 then unwrapped for 1 at 250?

    Question. So when is best time to sauce the ribs? During last 1he cook or when wrapping? Want to try it with sauce opposed to just dry rub.

      I ran 225 straight thru for 4-5 hrs this past weekend. i found the 321 method made my ribs too fall off the bone for my liking. 225 low and slow until done and spritz every hour!

    The temp difference is becuz your right above the heat source. You have to rotate the ribs. I rotate my chicken to when im doing thighs and legs. That way they all get cooked evenly. Its just a pit boss flaw in my opinion

      Thanks for watching our 3,2,1 rib cook. At the 3:16 mark you will find all the info you need. Its a time cook not a temperature of the meat cook! Smoker at 250F like we stated!

Got my PitBoss 820 about a month ago and I have been smokin and grillin ever since Ham to Hamburgers did a pork loin with Dry Brine and homemade rub to omit more salt and it was awesome and now getting ready to do me some ribs, after watching this video I can't wait ....
