    I've been watching your vids for a while now and I somehow just stumbled upon this one. I'm starting a coffee roastery in Illinois right now and I'm insanely jealous of your one sink... I have to have 5! FIVE SINKS! (three compartment sink with grease trap, separate hand washing sink, and separate mop bucket sink) 5 sinks in order to sell retail/wholesale. I'm doing a fair amount of business right now just working off the farmers market/word of mouth model, but being able to sell across state lines on a website would be a game changer for me. Right now I'm using a 4lb RK drum, which doesn't give me a ton of control over the roast, but I've been able to turn out some REALLY good batches pretty regularly. Anyway, your content has been super helpful for me and it's cool watching your business grow on here. Thanks for the effort you put into your channel.

    Hey man just found your channel recently! Over the past couple of years I got way more into coffee than ever before. I’m looking into exploring coffee roasting and potentially turning into a business with my wife ! Only issue, I haven’t actually roasted beans yet. Do you think that this is something that can be done out of an apartment to start off with or is having a separate space necessary? I’m more in the research phase right now and am currently still working in fitness full time. (FYI from the New England area too just saw you moved to CT, welcome!)

    First, Greatly appreciate the content, extremely valuable! I am thinking about getting an Artisan 3e, do you use a roast logging software to track your roasts for each origin and roast type or do you just do it based on feel, smell, time, and drop temperature, etc?

      Hi Jacob! I appreciate the comment. We do not use a roast logging software. We've found it not only be an unnecessary expense, but also a cumbersome means of operating. There is added value in it of course, but roast logging software is by no means a necessity. With the Artisan model roasters you are able to yield great consistency and control by using air temperature, bean temperature, time, sound, and sight. Hope that helps!

    How do you structure your pricing when approaching retail clients. Is it a percent off with minimum purchases

      Hi Earl! I appreciate the comment. The industry standard is around 35% discount for stores. The larger stores might expect greater margins, smaller stores might expect less. All depends on the store and manager but 30-35% discount is a great start.

    Interesting to see how you store your green beans. I’m using a Genecafe, and I have 6 regular customers, I store my Greens in 1 Kilo coffee bags. Can I ask how long Green beans last in good storage? I should add I place the bags of beans in a plastic storage bin in my bedroom(where I roast) and the ambient temperature is pretty stable. I’m thinking of getting an Aillio Bullet as 2 of my customers now want to go from 250gram to 500 gram orders, I do have two roast chambers for the roaster so I can swap out the roasted beans pretty quick.

      Hello! I appreciate the comment and that's a good question. So for green coffee bean storage what we do is keep the beans in completely opaque containers out of exposure to direct light in a temperature controlled room. You can actually hear the air conditioner running in this video (oops). Sounds to me like your storage methodology should serve you well--biggest thing is stable temp/humidity and minimal exposure to direct sunlight.
