Surti dal Ingredients
Tur dal 1 cup
Tomatoes ½ cup
Turmeric 1 tsp
Green chillies 2-3 pcs
Ginger ½ tbsp
Red chilli pwd 1 tsp
Curry leaves 4-5 leaves
Jaggery 1 tbsp
Oil 1 tbsp
Mustard seeds 1 tsp
Hing 1 tsp
Salt 1 tsp
Coriander chopped 1 tbsp
Water 2 cups
Fajeto Ingredients
Mango puree ½ cup
Curd ½ cup
Besan 2 tbsp
Turmeric 1 tsp
Red chilli pwd a pinch
Ginger & garlic paste 1 tbsp
Salt 1 tsp
Ghee 1 tbsp
Hing 1 tsp
Jeera 1 tsp
Mustard seeds 1 tsp
Cinnamon ½ inch
Red chillies 1-2 pcs
Mango chunks 2 tbsp
Water 1 cup
Ginger julienne 1 tbsp
Green chilli julienne 1 tbsp
Bhinda nu shaak Ingredients:
Bhindi 250 gms
Groundnut oil 2 tbsp
Methi seeds 1 tsp
Mustard seeds 1 tsp
Soaked red chillies 3-4 pcs
Garli 5-6 cloves
Jeera 1 tsp
Gathiya 2 tbsp
Hing 1 tsp
Green chillies 2-3nos
Turmeric 1 tsp
Jeera powder 1 tsp
Sour butter milk 1 cup
Kathiyawadi garam masala 1 tsp
Fresh coriander 1 tbsp
Khichdi Ingredients
Moong dal ½ cup
Rice ½ cup
Hing 1 tsp
Turmeric 1 tsp
Salt 1 tsp
Ghee 1 tbsp
Oil ½ tbsp
Mustard seeds 1 tsp
Curry leaves 4-5 leaves
Green chillies 3-4 nos
Tomatoes chopped 2 tbsp
Kathiyawadi garam masala 1 tsp
Cloves 2-3nos
Ginger julienne 1 tbsp
Water 3-4 cups
Biscuit bhakri Ingredients
Wheat flour 1 cup
Ajwain 1 tsp
Ghee 3 tbsp
Salt 1 tsp
Water as required
Mango shrikhand
Hung curd ½ cup
Mango pulp 3-4 tbsp
Powder sugar 2 tbsp
Nutmeg powder a pinch
Cardamom powder ½ tsp
Salt a pinch

nothing wrong with dhokla or tepla, and both are quite healthy. undhiyu, however, is the pinnacle of Gujarati cooking, IMHO.

Shu vaat che chef!! Finally you remembered the taste of Gujarat, but sir one thing is missing "farsan"... Anyways, damn happy to see a Gujarati thali made with so much of love and that Gujarati in between (mithu, dhanajeeru, lila marcha) outstanding. I understand that a Punjabi can't get that fluency in Gujarati but you tried very well.
A request chef, next time, take some time out and make Kathiyawadi thali as well - kadhi, gurnari khichadi, bajri no rotlo, ringan no olo, sev tameta nu shaak, aakhi dungli nu shaak, soji no sheero, and some farsan
