    Ordered my LSG fully loaded with offroad package in October and gave full credit to you when I spoke with Chris Goodlander. I've owned a Yoder 640 when they 1st came out but didn't like the lack of smoke flavor so I gave it to a friend. I said id never buy another pellet smoker again. After watching your video and Dead broke and a few others ive decided to try it again because it seems they have come along ways since 2012 when I had my yoder 640. Thanks brother.

    I watched this Brisket video many times and decided to try to smoke my First Brisket ever. Zgrill 550A , I am new to pellet smoker. So followed your recipe for 17lbs brisket, trimmed to 14lbs, after 12 hours cooking it came out amazing, I am from TX and looking forward to Smoke many more briskets. Thanks you so much

    I've discovered that the best (and only) way to smoke a brisket on a pellet grill to get a near replication of an offset smoker is to use the overnight (low and slow) method. I have a Traeger pellet smoker and use a smoke tube for maximum smoke flavor and a nice dark bark. Also, Joe, I totally agree with cooking the brisket on the top shelf of the pellet grill to get better bark formation and smoky flavor. I need to try the 'Smokin Pecan Pellets' since they put out so much clean smoke and see how much of a difference they will make with my brisket cooking.
    Thanks for producing this video, I've learned a lot over the years watching your videos and this has vastly improved my smoking technique and the quality of the food I smoke. You are a 'backyard BBQ god' for us weekend smoking warriors. 💯

    Ordered mine 13 weeks ago. Got an email yesterday saying they were starting my build this week. It's kinda like buying a suppressor. Gotta spend alot of money and then wait. However when the time does pass and you get your item your so happy you pulled the trigger and spent the money back when you did! Should have mine in a week or 2 now. So Excited!!

    All your briskets look so good. It actually made me go get an offset a few years back. I've only done a brisket twice because of the heat and fuel management required for offsets. Got much better the 2nd time I did it. I still want to try to smoke a prime rib like a brisket. That was the first video of yours I watched.

    I never wrap,but sometimes at to disposable pan and put covered,then last hour put back on grates.I add bone broth to make jus for french dip.

    I was between the LSG and the Yoder. I ended up with a Yoder because they're maid about 45 minutes from my house, so it seemed like the best option since it was more local. Nonetheless I've seen some great stuff come off those LSG's. Looks great!

    Tried my very first brisket this weekend using the low and slow over night cook. I know it can br better but my family thought it was excellent so thank you. Will get better ad I do more.
    Have only had sm9ker for 1 1/2 years and quite the adventure for me and my son.

    I’ve had a pellet grill since 2017 and it’s funny how everybody used to hate them then but now everybody loves them way more than they used to

    Excellent presentation! One thing you mentioned was the warming oven or Yeti or some kind of cooler and that size is a concern. I wanted to suggest you look at the Rest EZ BBQ Blanket. At 21 x 16 x 8 it has enough room for a fair sized brisket to be held and cooled slowly and at under $30 it doesn't break the bank. Like to see what you think of them.

    14 hrs x 1.5 lb/hr x $1.65/lb = $34.65 fuel cost. Assuming 1.5 lbs/hr pellet consumption at 225F as per LSG reports. Non pecan shell pellets are about $1/lb or $21 fuel cost if used. Smoke uptake is first 4 hours, so filling 6 lbs pecan in the beginning of the cook would be a good experiment.

    Been an lsg owner for 3 years now. If you're not running a probe at the grate then you're relying on the built-in probe which runs ~20 degrees hotter than the grate.
    So your 215, is actually closer to 190 at the meat.
    I run probes on the grate and use them to "control" pit temperature.

      I use channel 1 and 2 on the fireboard "permanently" to measure upper and lower grate.
      And go into the drive settings to tell the fireboard which channel to use to control the pit.
      Brisket I run on the top grate like you did. For things like ribs, pork and beef, I usually run on the lower grate.

      Thank you for this information. I’m trying an overnight brisket doing this exact method and it’s only a 12 pound brisket. After 12 hours at 215 degrees the meat was only 150°. I bumped the temperature to 250° to try and move things along and after 13 1/2 hours I’m up to 160°, but I will have to look at what the true temperatures are at the grate.
      Another thing I always noticed with this grill is the tell True thermometer is always 20 to 30° less than what the FireBoard controller reads.

      @@adhcmsand again that's about location in the pit. The tel-tru is center of the grill and on the side of the pit that opens. The default pit probe is in the back closest to the fire pot. For me the tel-tru is ornamental, and at best it's a "directional" guide on temp. The best, for me, is an ambient probe next to the meat being smoked.

      Thank you for your quick reply. I’m going to try your method using a temperature probe at the grate next to the meat. next time I do one. For the change right now I’m using my meter probe to compare the ambient temperature around meat and it’s reading 215° chamber temperature with the fire board set at 250.

I cooked it on the top shelf, fat side up but instead of going no wrap, I did the foil boat method for the rest of the cook after getting the bark I wanted. I had 12 people for dinner and many said it was hands down the best brisket they have ever eaten!
      I finally have my go to method for brisket, total cook was 14 hours!

I recently moved and am probably going to be forced to get a pellet cooker based on where I live now so I’m a little worried. How close was this brisket compared to an offset cook as far as smoke, flavor, tenderness and rendering?

    Jo, how did it compare to the offset? Ive been doing overnight for a few years and agree this is the best method. I hold in my 18qt roaster pan at 145 until im ready to eat. Works like a charm.

      It was really close. In my opinion, nothing will ever taste exactly like an offset brisket; but this Lone Star pellet smoker is by far the closest to an offset bark and flavor. I've smoked on several different pellet smoker brands and the Lone Star Smoker is where it's at. 👍

    I attempted an overnight brisket unwrapped on my weber smokefire last weekened. 225 degrees for about 12 hours. It was tender, but the outside was very tough, almost like jerky. How do you keep your exterior so moist/soft with it unwrapped?

      I’m going to assume you smoked this on the bottom shelf? Your smoker might be running hotter than what the controller said. You can also spritz the brisket with apple cider vinegar and water mixed at 50/50.

    Joe, You reversed the layers of SPG to GSP? what was your thinking? OR does it really matter when using a binder?

      Being 100% honest, both are amazing smokers but I feel the Lone Star has the upper hand. The Lone Star is extremely consistent on temps and the controller functions is in a league of its own.

      It was 12lbs before trimming. It was probably 10 after trimming.
