Pls minimize using prepared/packed mixed marinade. you can make your own marinade. TH-cam is the key. I dont say packed marinade are NOT good it is just it has alot of preservatives and too salty. Just my observation: Homemade Mang inasal Marinade: 1kg chicken legs or Wings 1/4 cup soy sauce 1 clove chopped garlic minced lemon grass 10pcs Kalamansi or lemon 1/4 cup sugar Grated ginger ( Mang Inasal Secret) 1/4 cup soda sprite Prep for Basting Marinade, oil , anato oil Baste the chicken while cooking to maintain the juiciness. I agree with you natural ingredients is the best. I have always disagreed with them when they always use mama sita for cooking. I mentioned before not all filipinos are using mama sita for cooking.
Andrey , when a recipe calls for marination, it means to leave meat in the marinade for some time, ideally overnight , if not, for a couple of hours before cooking....this process allows the meat to become more juicy and to absorb more flavor .. massaging the meat just moments before cooking is a waste ! ....your meat will not be juicy and flavorful ....and ideally adding some oil in the marinade will help keep meat from drying

Baste(or basting) with Annato seeds and oil means you "rub" or "paste" the annato extract and oil with a brush. Keep repeating to baste the BBQ until cook. Just like mama Olga rub the soy sauce and oil mixture in the chicken but should keep basting/rubbing (the annato and oil) using a brush from time to time.

Andrei, try making your own marinade instead of always using a mama sita spice. For the marinade ingredients just mix calamansi juice, soy sauce minced garlic which will give it a very nice flavor, vinegar, salt, ground pepper, minced ginger. You can also add some fresh minced chili peppers to the marinade. The minced garlic is the secret ingredient which gives the inasal a very nice flavor. I prefer making my own marinade for grilled chicken. You can even use the zest of the lemon fruit in yout marinade. Don't add sugar to your marinade because it will burn the chicken skin. You can also use the metal skewers given by your subscriber when grilling pork or chicken. It will be easier to turn whateven you are grilling.

FOR SERGEI EARS: my daughter has a similar condition. Every time she swims, she used to get ear infection. Doctor said, it has to do with the shape of her ears, water gets in and doesn't dry well causing ear infection. The doctor recommended using hair dryer on low setting after each swim directly in his ears and dry it well to avoid infection. Hope this helps so he can fully enjoy swimming. You can baste the chicken while cooking on both sides while with the marinade for more flavour.
But the marinate needs takes time Andrei, like it will be nice if whole day marinate or at least 4 to 6 hours
have to leave the marination 2-4hrs, much better if overnight so that souce will sits in the meat and it will be more juicier and tastier😊😊
