    You are so right Renea, roasting the chicken gives it such a depth of flavor. So good for chicken soups, chicken salad and I love making chicken with gravy using the chicken and broth. Thank you for another video showing people how to pressure can. I had a guy ask me the other day to show him how to pressure can and I said of course I will.     I've always raw packed chicken but this looks really good. I will try it next time chicken goes on sale. Thanks for a great idea.

    I tried to can both white and dark chicken for my stew with a dome broth in a pint jar. But a drum stick is too tall to fits and my canner does not do quarts. So I cut the drumstick to fit. But your way was much easier. Creat lesson for me to learn.

    I love doing my leg quarters this way. Extra flavor and the broth is so good. Perfect for chicken salad or soup or chicken and dumplings.

    I sliced 'oven roasted' chicken today at work. have to slice it at at least 15 or it doesn't come out in 'sandwich sheets' -carefully.

    I am a certified canner. It is my passion and addiction. When I give canned chicken away, I get the "oh gross" looks. I tell them it will be the best thing you'll ever eat. They call me up right away and just cant believe how delicious it is, then they want to learn how to can. ( that's how I get em!).

      I am a canning addict already, so that part is done. 😂 I was wondering what is involved in becoming a certified canner? I’ve heard of it, did some research, but the best answer always comes from someone who has completed the requirements. Just curious.

    Per 10lb leg quarters I get 9-10 qts broth. I roast and debone, put the bones and skin in pressure cooker for 3 hours. I do 3 batches of bones, about 3 qts water each. I use the chicken to can soups and add some cooked breast to the mix since dark meat isn't my favorite

    Beautiful. I preferred use water bath canning because I’m scared of pressure canning seem hard and can’t hear.

    Do you save your skin and bones to do more broth? I love to do that along with carcass from rotisserie chicken. I've been at Sam's Club and bought 5 rotisserie chickens just to take home and can the meat and them make broth. So good.

      I did can the remaining stock with the same canner load. Too good to waste.

      Soon after learning pressure canning last year I started canning chicken and ground beef. For me it is easier than vegetables in that there is less prep with skinless raw pack. Ive never tried roasting first so that will be next! Happy canning. Ground beef is a must have on the shelf too. 😉

    I seen someone a yr or so ago doing some caning with fruit and vegetables, but not chicken. But he did his on top of the stove. Place water in a nice size pot. Place his jars into the water for about 15-20mins. It was not a pressure just a reg pot. So is this the same but different method?

      He used the waterbath method. Meat and vegetables are a low acid food and must be pressure canned.

      no it is not completely cooked through so it finishes cooking in the canner and comes out delicious.

      We always raw pack chicken. It’s easy and tastes perfectly fine added to a recipe. I’m not sure I’d want to spare what little time I have to roast the chicken. Maybe on a weekend off work I might try it.

      I’m sure some people do. The old school way. I’ve seen comments on other channels. Few and far between though.
      Society has gotten lazy. Going to the store or restaurant to get food. When you grow your own food, and hunt. You have to preserve it. If you want to can, there is no better time than now to learn! 😀

    That looks beautiful. I think I’d prefer it canned this way instead of raw packed. I just don’t care for the taste of ugly chicken.

      Neither do I, the flavor is just not there and it seems no matter what you put it in you just can't make it tastier.
