Mme.ji please do not be dismayed at the thought of peeling. Please try one of these ways. 1. cutting board waist high on a kitchen counter, b[ a Chinese No.2 type of cleaver/dao which will be handy for all things. c] cut proof restaurant quality gloves, which are classed by numbers 6 is very good for those who have to cut much and type 9 is overkill for your needs. 6 and below will serve well. Please place one clove at a time, Place the flat side of the cleaver on the clove and press hard. The clove will get skinned and smashed a bit at once. Please ask Krishnaji to get you a round of tamarind wood for the cutting board. The cantonese style is to smash the flat of the cleaver on the clove, which will remove skin and crush it quite a bit. Proceed with other cloves, noy taking any off the cutting board. The Chinese chef then uses the sharp cleaver to mine the garlic. This is very easy after just a little practice. For minced ginger, take washed ginger root and cut them into thinnish rounds. One round at a time, smash the side of the cleaver on it, pulling the cleaver a tiny bit towards you. The ginger round will be smashed flat unless it is very old and fibrous, which means less quality. You can mince the ginger finely on the same board. 2. I use a small thai mortar and pestle to LIGHTLY pound whole garlic bulbs to crack them. Lift out the hard root end, Lightly pound the garlic cloves and the skin will come off easily. You can choose to keep a gentle poinding and circular grinding motion making the granite pestle hug the circumference of the mortar; a medium size with a 6 in bottom width, or a little bit bigger. aaif you fancy making som tam, or thai/laotian salad, a conical clay mortan that is fairly long, and a long wooden peste. Very good to de-skin garlic and even pound coarsely. Your expat English friend from Birmingham has a wealth of experience re: Thai kitchenware. The quality is very very good and prices very low for that quality. There are many pieces of thai kitchenware you can buy over time. I should think that a medium size granite pestle and mortar should be available in India, or even Nepal s I felt very sad at your dismay skinning garluc cloves. The smell will also seep into your finger tips. If you are able to adopt methods that make the chore much easier, you will get more satisfaction at cooking local dishes. It will not be a punishment any more!!
Tyo larva ko naam k ho? 1600!!!! What's the name of the dish for the larva? I'm Nepali but I was raised in Canada so I never seen that dish, but I have bone issues 🤣🤣

When I went back to Nepal originally I was so excited to see how animals were bought picked and killed naturally right in front. I'm a man so naturally I found it very "entertaining" (might not be the right word to use) to witness everything first hand.
