Low Net Carb Strawberry Jelly Cream Cake Recipe - Made of Bamboo Flour, Low Net Carb And Gluten Free

  • Imagine an airy bamboo fiber sponge cake as a base, followed by a creamy vanilla pudding layer, topped with a delicious fruity strawberry layer that’s surrounded by jelly - are you drooling yet?
    The best thing is that you can eat this cake even if you're on a low-carb, keto, or gluten-free diet. You will love it!

    Cake:
    20g bamboo baking flour (16g bamboo fiber and 4g ground whole psyllium husk)
    45g sweetener (stevia erythritol)
    a pinch salt
    1 tsp baking powder
    10g unsalted butter
    4 large eggs
    1 tsp vanilla extract
    Vanilla pudding:
    1 packet of sugar free instant vanilla pudding (Jell-o or Simply Delish)
    1 cup (225g) heavy cream
    1 cup coconut milk
    1 tsp vanilla extract (optional)
    Jelly:
    1 pack sugar free strawberry Jell-O
    2 cup water
    16oz (454g) strawberries
    Steps:
    In a mixing bowl, measure all your dry ingredients:
    20g of bamboo baking flour (16g of bamboo fiber and 4g of ground whole psyllium husk),
    45g of sweetener (stevia erythritol),
    a pinch of salt,
    1 tsp of baking powder.
    Mix them well.
    Melt 10g of unsalted butter.
    Separate 4 large eggs.
    Mix the egg yolks with 1 tsp of vanilla extract.
    If any yolk does get into the white, do not use it, save it in the refrigerator for another time.
    Beat the egg whites until it’s super thick and fluffy and holds stiff peaks.
    During this time, prepare the cake pan. Line the bottom of a 9” cake pan (23cm) with parchment paper and
    preheat your oven to 360F (180C).
    If you use allulose sweetener preheat your oven to 325F (160C).
    Add the egg yolk mixture and beat at medium-low speed until it’s combined.
    Sift in the dry ingredients and beat at medium-low speed, just until the flour is mixed in.
    Then slowly add 10g of melted unsalted butter and mix.
    Use a rubber spatula to fold the mixture a couple of times.
    Pour the batter into the 9” (23cm) round pan and spread it.
    Bake the batter in preheated oven at 360F for 20-22 minutes.
    (If you use allulose sweetener, bake the cake at 325F for 20-25 minutes and covering the top of the cake loosely with parchment paper will prevent the top from burning.)
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    Cool the cake completely on a wire rack.
    The cake must be completely cool before frosting and assembling.
    Make the vanilla pudding layer:
    You can make sugar-free vanilla pudding or use sugar-free instant pudding.
    I usually use sugar-free vanilla Jell-O instant pudding (you need regular size, not family size) or Simply Delish sugar-free instant pudding.
    The Jell-O brand is more delicious, but the ingredients in Simply Delish are much better. The choice is in your hands :).
    For this cake I use the Simply Delish brand.
    In a mixing bowl, measure 1 cup (225g) of heavy whipping cream and
    1 cup (208g) of unsweetened coconut milk.
    Add 1 packet of instant pudding to them.
    Beat on medium speed for about 3 minutes.
    Add 1 tsp of vanilla extract (only if you use Simply Delish brand) then
    whisk to combine.
    Place the pudding into the fridge until using.
    Wash, de-stem and slice 16oz (454g) of strawberries.
    For the strawberry jelly, I use sugar free strawberry Jell-O mix.
    Add 1 cup of hot water to gelatin mix and stir until completely dissolved.
    Stir in 1 cup of cold water then place into the fridge to cool completely.
    When the cake has cooled down completely, place it back in the cake pan.
    Then spread the vanilla pudding in an even layer on top.
    Arrange the strawberries on top of the pudding, pressing down slightly.
    Pour the cold jelly over the strawberries in an even layer and immediately place back into the fridge for about 2 hours to firm up.
