You just gotta grate it, or blend it with a melting cheese (or emulsifiers via 'Kraft singles' type cheese), or cover it with a cloche to retain the heat...There are ways to make less melty cheeses work despite themselves. Cheddar's a hard cheese and it's great for grilled cheese (I'm enjoying a smoked cheddar grilled cheese at the moment, cut with some mango-habanero-infused cheese I forgot what it was called). Gruyere even. But the bigger problem here is that Gordon cut big damn slabs of cheese on big damn slabs of bread, giving everything the worst possible chance...

I thoroughly disagree. It's still a grilled cheese it you have a single accent ingredient. It only gets muddy once you start adding more and the cheese ceises to be the star of the show... But something like kimchi, or some thin sliced seasoned tomatoes, or even a little bacon can absolutely be that accent ingredient. Also, grilled cheese doesn't require american cheese. Something like gouda is perfectly acceptable and certainly more palatable than something like craft singles

I like to use one slice of American and one slice of another nice cheese. I find that the American combines and melts well with other cheeses and can even make another great cheese even more flavorful.
'American cheese' combines and melts well because it's blended with emulsifiers for that exact meltability. But you don't even need that if you just don't cut ridiculous slabs like Gordon did here. :x

Then serve with a simple mug of campbell's tomato soup made with a tbs of butter and milk.

Man we used this cheese with everything. Macaroni and cheese, grilled cheese, hamburgers, hot dogs, queso dip..... That's the one thing I actually do miss about getting that cheese back in the day.
Larry Lawton did a prison grilled cheese episode. He said the prison had the block cheese. The best part was them getting the iron to cook the sandwich. That cheese still melted perfectly.
Agree with Frenchy...Mayo all the way! Though, I DO sometimes add some wasabi powder to the mayo for a little bit of spice. It does char a little faster, but done right it adds just a slight smoky flavour! All that said...Wonderbread and american cheese is my normal go-to, especially with homemade tomato soup!

I love grilled cheese, but I’m also lactose intolerant. I can only eat hard cheeses, so when I make grilled cheese, it’s with cheddar or Jarlsburg. I grew up with Jarlsburg on Jewish rye anyway. But I’m not serving it in a restaurant. EDIT: And yes, we sliced it thin.
I am British and I love British Cheese on toast, it is something we all grew up with. The way we had it it was usually made with white sliced bread, cheddar chese and some Worcester Sauce or Hendersons Relish (a locally made sauce) lightly drizzled on. I also loved a grilled cheese but Gordon's seemed to be going for posh for the hell of it. I love Frency's reactions it has made my evening.

Havarti + Cotswold is my mix when I want something other than American. Throw a little bit of pepper and old bay in. If I'm feeling *real* fancy I mix the butter with some gorgonzola, so it's an extra cheesy grilled cheese
I also do a light butter inside, I'll have to try toasting the inside first. Agree this didn't look good. crusty bread would be too hard to bite. Do enjoy a grilled cheese. I occasionally use a lid over the sand while cooking to ensure cheese melts correctly, keeps the heat in.
Perfect grilled cheese for me is Texas Toast, toast both sides first so the cheese melts fast. American cheese melts the best. But a slice of cheddar or pepperjack mixed in; delicious.

Grilled cheese growing up was "rat" cheese on Mayo coated Mrs Baird's (inside the sandwich) butter on the outside. Cheese toast was made when someone didn't feel like fighting the cast iron.
My favorite thing to do with grilled cheese is to put garlic, pepper, and powdered psrmesan cheese into the butter. The parmesan helps protect the bread while still letting heat through to melt the cheese. It also adds a ton of flavor and texture.
Great simple easy grilled cheese: Place frying pan on stove. Turn on medium to medium-high heat. Add butter and let it melt. Place normal sandwich bread in frying pan let it toast to your wanted level of toasting. Take toast out of frying pan. Add more butter to frying pan. Let the butter melt. Put bread back in pan with untoasted side down. Place American cheese on top side. Once bottom is at wanted level of toasting take the toasted cheese out and combine the pieces together with cheese on the inside. When you add the American cheese you can also combine the two slices of toast together and finish cooking like a normal grilled cheese. When you add the cheese you can also add ham or other types of sandwich meats to have a grilled meat and cheese sandwich. Also pairs well with soup of choice.
I make my grilled cheese like Brian. Butter is better, toast one side then cheese and close it up, American cheese and white bread or at least a very melty cheese and thin bread. However, I'm also of Italian decent, and I grew up on what my mom called Italian grilled cheese, which was: toast a crushed clove or two of garlic in olive oil, remove the garlic, then make grilled cheese but with thin slices of Italian bread and mozzarella. Not as good a match for tomato soup, but still awesome.
Actually lactose intolerant people can eat many hard cheeses that are aged for more than a year and there are special tablets you can take to assist with it. Also I am lactose intolerant and I constantly tell people that if cheese takes me out then fuck it. I'm not living without cheese. I feel that there might be a language difference as well. What you call a grilled cheese, we'd call a jaffle. To us a grilled cheese is one slice of bread then the cheese on top and you bung it under a griller and the cheese goes all melty and slightly browned and incredible.

I will stand on this hill until the day I die: American cheese is the perfect base for most grilled cheeses. It's just the perfect thing for it; low melting point, good flavor, and accepts additional cheeses easily. Now you can go partial or full hoity toity with stuff like adding grated extra sharp cheddar or asiago to the American or other low-melting point cheeses as bases and that's fun too, but good American cheese? The gold standard. Never touch anything that says something like 'dairy product' though. Spend a couple extra bucks, don't eat that garbage. edit: Also the bread isn't just a delivery system for cheese! How dare you forget that it is a delivery system for butter as well! The magic of grilled cheese is the marriage of fried bread and melted cheese. All hail our dairy overlords. Oh, and my best tip for grilled cheese? Plan ahead, let your cheese hit room temp before you put it on the heat.

I too am a butter purist. And the type to toast both sides of the bread so it's crispy on the inside and out. I've also put pickle chips in between slices of american cheese if I want something extra. Provolone is nice for a grilled cheese if you want a slightly different flavor. The fanciest I've done is use mild cheddar instead of processed american.
Smoked cheddar with mango-habanero cheese (I lost the label and don't know what it is; One of those paler blander ones; Asiago?) is my current go-to 'cause it's fucking delicious. There's not even a need to be limited to the Kraft Singles sort of cheese. Just grate or chop the harder stuff and put a lid on the pan.
Gordon's responded to the criticism sometimes. He blames his producer for springing this on him so close to a deadline, which explains a couple things. He’s also made a redemption grilled cheese on the Hexclad channel, so that’s fun.
i'm not buying that excuse, the final product being what it is still falls on him not pushing back when he can just look at the end result. Not to mention, in all the reality shows he appears on where he/his producers just love setting short deadlines in unfamiliar conditions, he still yells at people when things turn out under/overcooked a bit.
Except that in that "redemption" video he failed again. He made a short rib sandwich with cheese in it and called it grilled cheese. I'm pretty sure at this point he has no idea what a grilled cheese even is.
A grilled cheese sandwich can be made in less than 10 minutes with 3 ingredients (bread, butter and cheese). It takes longer because Gordon doesn't understand what a simple recipe is. His recipes always have 30 different ingredients which require extra time being prepared. No wonder he complains about the deadline. I'm just going to throw out that the government cheese in a block (yes I'm old) was and still is the best cheese for grilled cheese sandwich.

ShopRite sandwich white bread is the best store bread I've found for grilled cheese it's freaking great. It's got larger bubbles that stand up to the butter

For grilled cheese I use pre melted cheddar and Emmenthaler cheese, with a littlebitt of cream.

I love grilled cheese, but I’m also lactose intolerant. I can only eat hard cheeses, so when I make grilled cheese, it’s with cheddar or Jarlsburg. I grew up with Jarlsburg on Jewish rye anyway. But I’m not serving it in a restaurant. EDIT: And yes, we sliced it thin.
I do it with grana padano. It's delicious. Though I like thinly sliced ciabatta.

I am British and I love British Cheese on toast, it is something we all grew up with. The way we had it it was usually made with white sliced bread, cheddar chese and some Worcester Sauce or Hendersons Relish (a locally made sauce) lightly drizzled on. I also loved a grilled cheese but Gordon's seemed to be going for posh for the hell of it. I love Frency's reactions it has made my evening.
Fontina and Havarti on wheat for me. SLC airport has a grilled cheese stand that sells kimchi grilled cheese sandwiches. So awesome.

Havarti + Cotswold is my mix when I want something other than American. Throw a little bit of pepper and old bay in. If I'm feeling *real* fancy I mix the butter with some gorgonzola, so it's an extra cheesy grilled cheese
I also do a light butter inside, I'll have to try toasting the inside first. Agree this didn't look good. crusty bread would be too hard to bite. Do enjoy a grilled cheese. I occasionally use a lid over the sand while cooking to ensure cheese melts correctly, keeps the heat in.

Perfect grilled cheese for me is Texas Toast, toast both sides first so the cheese melts fast. American cheese melts the best. But a slice of cheddar or pepperjack mixed in; delicious.
My parents used to insist on putting bologna or salami on it. I love salami but I dunno about putting meat on a grilled cheese. Not really a grilled cheese anymore. But I do want pepper on it! Pepper on everything!

Grilled cheese growing up was "rat" cheese on Mayo coated Mrs Baird's (inside the sandwich) butter on the outside. Cheese toast was made when someone didn't feel like fighting the cast iron.

My favorite thing to do with grilled cheese is to put garlic, pepper, and powdered psrmesan cheese into the butter. The parmesan helps protect the bread while still letting heat through to melt the cheese. It also adds a ton of flavor and texture.

Great simple easy grilled cheese:
Place frying pan on stove.
Turn on medium to medium-high heat.
Add butter and let it melt.
Place normal sandwich bread in frying pan let it toast to your wanted level of toasting.
Take toast out of frying pan.
Add more butter to frying pan.
Let the butter melt.
Put bread back in pan with untoasted side down.
Place American cheese on top side.
Once bottom is at wanted level of toasting take the toasted cheese out and combine the pieces together with cheese on the inside.
When you add the American cheese you can also combine the two slices of toast together and finish cooking like a normal grilled cheese. When you add the cheese you can also add ham or other types of sandwich meats to have a grilled meat and cheese sandwich. Also pairs well with soup of choice.
I make my grilled cheese like Brian. Butter is better, toast one side then cheese and close it up, American cheese and white bread or at least a very melty cheese and thin bread. However, I'm also of Italian decent, and I grew up on what my mom called Italian grilled cheese, which was: toast a crushed clove or two of garlic in olive oil, remove the garlic, then make grilled cheese but with thin slices of Italian bread and mozzarella. Not as good a match for tomato soup, but still awesome.
Actually lactose intolerant people can eat many hard cheeses that are aged for more than a year and there are special tablets you can take to assist with it. Also I am lactose intolerant and I constantly tell people that if cheese takes me out then fuck it. I'm not living without cheese.
I feel that there might be a language difference as well. What you call a grilled cheese, we'd call a jaffle. To us a grilled cheese is one slice of bread then the cheese on top and you bung it under a griller and the cheese goes all melty and slightly browned and incredible.

Best grilled cheese I've made had a core of American, thin slices of Gruyere on either side of that, and finely-grated Parmesan on either side of that. And the special trick: after you butter the bread, sprinkle some smoked paprika on the butter, then grill it in a covered skillet, low & slow.

Just like to thank you Chef Tsao, i barely ever cook anything meaningful, mostly just like ready meals. Mostly due to health and general inability.
However today I've decided to make some chicken adobo, i mostly followed Joshua Weissmans recipe. Ive got the rice cooked ready to fry tomorrow, and the chicken is in the fridge in the marinade.

Mayo may toast better, but the flavour is in the butter. Nothing beats butter for grilled cheese.
I will stand on this hill until the day I die: American cheese is the perfect base for most grilled cheeses. It's just the perfect thing for it; low melting point, good flavor, and accepts additional cheeses easily.
Now you can go partial or full hoity toity with stuff like adding grated extra sharp cheddar or asiago to the American or other low-melting point cheeses as bases and that's fun too, but good American cheese? The gold standard.
Never touch anything that says something like 'dairy product' though. Spend a couple extra bucks, don't eat that garbage.
edit: Also the bread isn't just a delivery system for cheese! How dare you forget that it is a delivery system for butter as well! The magic of grilled cheese is the marriage of fried bread and melted cheese. All hail our dairy overlords.
Oh, and my best tip for grilled cheese? Plan ahead, let your cheese hit room temp before you put it on the heat.

I too am a butter purist. And the type to toast both sides of the bread so it's crispy on the inside and out. I've also put pickle chips in between slices of american cheese if I want something extra. Provolone is nice for a grilled cheese if you want a slightly different flavor. The fanciest I've done is use mild cheddar instead of processed american.
Smoked cheddar with mango-habanero cheese (I lost the label and don't know what it is; One of those paler blander ones; Asiago?) is my current go-to 'cause it's fucking delicious. There's not even a need to be limited to the Kraft Singles sort of cheese. Just grate or chop the harder stuff and put a lid on the pan.
I used to just taking a slice of rye, a slab of cheese from a tasty block and shoving it in the oven.
Gordon's responded to the criticism sometimes. He blames his producer for springing this on him so close to a deadline, which explains a couple things. He’s also made a redemption grilled cheese on the Hexclad channel, so that’s fun.
But that’s still not technically a grilled cheese 😂
i'm not buying that excuse, the final product being what it is still falls on him not pushing back when he can just look at the end result.
Not to mention, in all the reality shows he appears on where he/his producers just love setting short deadlines in unfamiliar conditions, he still yells at people when things turn out under/overcooked a bit.
Except that in that "redemption" video he failed again. He made a short rib sandwich with cheese in it and called it grilled cheese. I'm pretty sure at this point he has no idea what a grilled cheese even is.
A grilled cheese sandwich can be made in less than 10 minutes with 3 ingredients (bread, butter and cheese). It takes longer because Gordon doesn't understand what a simple recipe is. His recipes always have 30 different ingredients which require extra time being prepared. No wonder he complains about the deadline. You're making a sandwich Gordon, not a 3-course meal for a restaurant.
Videos like this just show you that even world famous chefs are full of it sometimes. Frenchy, "he's got a big head he can fit that in there" 😂.
Britain also has a version of grilled cheese called a Welsh Rarebit.

Thin sourdough with smoked gouda and shredded provolone (or swiss).
I use pepperjack for my grilled cheese and put in sourdough.
