Slow Smoked Whole Pork Butt in a Pellet Smoker

  • I decided to break out the Pit Boss one more time for an overnight, slow smoked whole pork butt cook. The pork butt smoked for 13.5 hours at 250 degrees F until it reached an internal temperature of 205 degrees.
    The fat cap on this pork butt was thick enough that I decided not to spritz it or wrap it. This is because there was enough fat to render throughout the entire cook and keep the pork butt from drying out.
    The bark that formed was some of the best I've had.
    In summary, the pellet smoker is all about convenience. You trade a little bit of flavor for the convenience of not having to manage a fire. Its a fair trade in my opinion.

    Love your potted garden. Nice to have the space for that. Being old school at 80 I learned long long time ago two tbs fish emulsion fertilizer to a gallon of water really invigorates your plants. I use a lot of Lumberjack Pecan pellets in my smokers. I've tried the Traeger but, I find the Lumberjack's give a lot better flavor. P.S. I'll be flying out to my sister's in North Olmsted 18 August. I can really taste those strawberries over French Vinilla ice cream.

    That’s one mighty fine pork butt Mike! Looks absolutely delicious! Your strawberry dessert over ricotta cheese looks amazing! (Try using a straw and push the straw from the bottom through the top and it pops off the cap and cores the strawberry.) really nice cook Mike! Thanks for the tour of your garden. Growing nicely.       Thanks Bill. The only reason I did t put water in the pan is I don’t like to clean it out afterwards. The water does have benefits but I just don’t like having to dump out the leftover or having to refill it every couple of hours.

    Hello from Youngstown. You seem to enjoy vertical smokers. I had a 24x48 horizontal offset made with a 4 foot vertical on the end... the thing is.. there are two dampers on the vertical and I can not figure out how they are used.. both the horizontal and vertical have a smoke stack... but the vertical has two additional dampers... one on the side and one on the back... I'm clueless. The only vertical I've owned was an electric masterbuilt I got back in 2017.. thats not helping at all. Cheers.

      If you are using the app on your smart phone there is no limitation... it connects to your WiFi. I can be on the lake fishing and monitor it from miles away. If you dont want to use a smart phone, the control unit uses Bluetooth and you get about 150 feet.
