    Those kids don't go to school. Muay Thai is all they have to make a life for themselves. They live at the gyms. Train all day everyday.

    Most of Muaythai fighters fight to live, not live to fight. That's why they start at very young age for supporting themselves to go school and not bothering parent's financial. At the Muaythai camps provide free food, free shelter for fighters, but they have to fight under the camp' name who is sponsored them. This is normal in Thailand. Some are changed career when they grown up, but some still on such as Rodtung, Tawanchai, Nong-O, Buakaw, Saenchai, even some are over 40 years old.

    I see no one has really explained it, maybe you won't check this, but anyway here goes. My limited knowledge.
    Muay Thai is also known as "the art of 8 limbs" which you heard mentioned a couple of times. That is 2 hands, 2 feet, 2 knees, 2 elbows. It differentiates from kickboxing (which it shares a lot of rules with) in that elbows are allowed, kickboxing you can kick, punch, and knee, but not elbow.
    The more literal translation "muay" is the Thai word for combat, so literally "Thai combat".
    One more thing to clear up, new word for the day, "promotion". Not like you get at work, but in terms of the combat. You kept referencing UFC, and I understand it is what most people are familiar with, but UFC is NOT a "sport" it is a promotion - specifically, the largest MMA (mixed martial arts) promotion in the world. ONE Championship is a smaller, MMA and other martial arts promotion based in Singapore. They hold MMA fights (which would also be analogous to your UFC fights that you have experience with) but they also have some fights that are strictly jiu-jitsu rules, or kickboxing rules, or muay thai rules. That is why you see "Muay Thai" pop up on some of the ONE fights, to differentiate between MMA rules.
    So how is muay thai scored? And those -time world champion titles? Muay Thai allows for punches, knees, kicks and elbows, some offensive grappling (the "clinch") but if the referee determines it is being used defensively he will break the fighters apart and have them fight at distance, and the "throw" which is like a judo hip toss, or throwing them down from the clinch. It scores less than a knockdown by punches but it does show who is the stronger, more in control fighter. I'm not an expert on the other promotions, but ONE muay thai is 3 minute rounds, 3 for normal fights, 5 for championship bouts, same as UFC but shorter per round.
    Two last things: look at the glove size difference between muay thai promotions and ONE. In ONE they use the 4 oz MMA style gloves, in muay thai they usually use larger gloves. This means in ONE the hits are harder and the margin for error of blocking is smaller.
    Also the rule for knockdowns is they have an "8 count" - the fighter has to get up within 8 from the referee, raise his gloves, and step forward towards the referee. If he seems to be too impaired to continue they will stop the fight.

      Correct.
      Rodtang is a modern legend and I really like his style. He is actually also very technical despite his aura just radiating Hulk-energy he actually has immensely good form and technique it's just often overlooked because his bulldozer mode steals the spotlight.
      But what he isn't (yet, so far) is one of the great tacticians of all time. There is Saenchai being an immense tactician allround, there is Somrak the best head movement dodging fighter ever, there is Lerdsila the greatest in overall defense of evasive nature ever, there is Samart who innovated his footwork, and of course Buakaw a straight up monster of the 4 lower limbs. Who btw also is not to be underestimated in defense and weaving and all that but is rather known for just legs that can end your life. Like a Buakaw kick hits a regular person like you or me we are dead. Please cremate; no funeral.
