The transition where he went from e dominant to A minor is called secondary dominance. There’s a ton of videos on this, but essentially if you want to transition to a minor chord take the 5th of the chord, in this case the 5th of A minor is e, then you use the e to make a dominant chord before you go to A minor. With that you can go from F full deminished, drop F half step to E to turn it into E7 and resolve to Amin7 or Amaj7 your choice
Dominant 7's sounds kinda dated nowadays, even though they are crucial. If the dominant 7 sounds like it doesn't fit the vibe, try to replace it with a sus7 chord
