- In this video, let's make perfect Halwai Style Rasmalai. Rasomalai is an Indian Mithai dessert invented by the son of Nobin Das, Krishna Chandra Das (KC Das) in 20th Century. This recipe is basically made by first cooking flat Bengali style sponge rasgullas and then soaking them in a kesar-pista thin rabri(condensed milk) for few hours. Making perfect rasgullas is tricky, that is why I will share secrets to make it easier. This recipe uses Packaged UHT Treated 3% Buffalo Milk

Ingredients:
Milk for Chenna - 1 liter ( I used heritage brand 3% fat, 8.5 solids not fat)
vinegar / lemon juice - 2 tbsp
water - 2-3 tbsp
Corn flour - 1/2 tsp
Sugar - 2 cup
Water - 6 cups
Ice cubes - 10-12
Milk for Rabdi - 1/2 liter
Kesar - few strands
Cardamom Powder - 1/4 tsp
Chopped Nuts - as desired

Unbelievable!! I was clapping with joy when those Rasgullas became double in size in that boiling sugar syrup!! Simply amazing!! And also this recipe is not scary otherwise I have never in my life considered to make Ras Malai at home!

i tried this recipe...it turned out really tasty and delicious😍 they were really soft and chewy
the only thing i did in a different way is that instead of kneading i used a mixie blender to make the chena fine in texture and that makes it more softer and chewy❤

I got to taste some of the Bengali sweets when my fiancé brought some for me from Kolkata and I fell in love! And seeing how time and effort put to it, I'm not surprised why Bengali sweets are best. Better than my usual chocolates lol

Edit: Well, i made it. Er, wow. It's a bit odd eating this cold in the UK in winter but in the summer it'll be a winner. The "sauce" is outstanding and kneading the "cheese" (not a euphasmism!) is vital!!
