食材 (Ingredients):
椰子油 60g coconut oil
糖 100g sugar
雞蛋 1 egg
椰蓉 70g desiccated coconut
面粉 150g all-purpose flour
泡打粉 ½ tsp (3g) baking powder
小蘇打粉 ¼ tsp (2g) baking soda
鹽 ¼ tsp (2g) salt
Bake in the oven at 350°F for 18-20 minutes

Cooking Instructions:
1. Crack one egg in a bowl with 60g melted coconut oil, and add 100g sugar, mix it well till creamy;
2. Add 70g desiccated coconut in the bowl, mix;
3. Mix 150g all-purpose flour with 3g (1/2 tsp) baking powder, 2g (1/4tsp) baking soda, and 2g (1/4tsp) salt together, and sieve the mixture into the bowl;
4. Knead flour into a dough between both hands, don’t over-knead;
5. Make small balls (about 20g) on kneading board and flatten them, then cover it with food film for about 30 minutes for fermenting;
6. Brush a little oil or place a wax paper on a baking tray;
7. After 30 minutes transfer cookie doughs on the baking tray;
8. Pre-heat oven to 350°F, and bake for about 18-20 minutes until the top of the cookies are light brown;
9. Enjoy.
