if you want good rise, add vital wheat gluten to your whole wheat; AP & bread flours have the nicest rise but you can introduce more whole grain without sacrificing rise if you add some of the vital wheat gluten.
I’ve made this bread a few times now. IT IS SOOOO GOOD! It’s also fool proof. I’ve rushed it and done it all in a day…turned out great. I’ve forgotten about it and stretched it out to 3 days - still awesome. I have tried several recipes for whole-wheat sourdough and this one is BY FAR the best.
I love that you use mostly your own milled wheat flour. It has been hard for me to find sourdough videos that don’t use all-purpose flour as the main flour. And many use rye flour as well, but I prefer wheat flavor. So thanks! And I love spelt, too!
I could watch bread making all day! There is something so relaxing about it but I really love kneading the dough myself. I daydream while kneading LOL My moment of pleasure without feeling like I need to get busy LOL Thank you for sharing.
My girlfriend has issues with things like breading on foods and white bread. I've just started making sourdough and tried to explain to her exactly what you've said. I got her hooked on raw milk which she also had an issue digesting. That seemed to solve her dairy issue as I'd imagine this would solve her bread digestion issues. I'm glad I'm not the only person to understand how flawed our grocery store food is

@@TheSeasonalHomestead I used to change out my jars and then got pink mold when I stored the starter in the fridge. I bought a tall sourdough jar that only gets used for starter. It came with a long spatula that made it easy to reach the bottom and is marked on the side.

I would love to see more about grinding your own wheat and where you get it from. Do you grow your own wheat yet? I really want to get away from enriched flours, but I feel like the only way is if I grow and grind it myself, and I’m not nearly close to being able to do that yet haha. I highly recommend the Wondermill as well. As a large family with 8 kiddos, I use the wondermill every other day to bake our sandwich bread and for other flour use. Lots of baking goes on at our home. Ive had it for years. Still going strong, I dont know what I would do without it! I get our wheat berries from Azure Standard. Although, we have had a lot of items going out of stock recently. Its been hit or miss with what wheat berries are in stock.
I have to admit you are teaching me a thing or two. I am probably twice your age, but you seem very smart. I bought a scale, kind of like you have, a few months ago. I need to learn how to use it, because you made me just realize I wasn't doing it right! I am still in the dark of how to use it by zeroing it out before weighing something again, but I can learn. This is only the second video I have watched from you and I have already been inspired by you in this homesteading adventure. I am a gardener and I am also preserving food. Finally an AMAZING loaf of sourdough with my freshly milled flour! Thank you so much for sharing this recipe. I have made it twice now (and even did the oven temperature wrong once) and the bread has turned out amazing. I’ve been trialling so many recipes for a couple months now and have so many failed (dense) loaves of bread but am very very happy with this one! My family loves it too 🎉

I do occasionally adjust it, but it's a good starting point. I also will try and mention this in future videos :)
Thank you for this video. I love fresh baked bread and have been experimenting and perfecting methods for many years. The best thing I did was invest in Emile Henry baking pans. They are ceramic pans that retain the moisture so the bread bakes perfectly. I try many different grains and make my own flour as well. It looks daunting at first but once you learn a method it is very simple. Everyone should try to make their own bread. There is not a better smell coming from the kitchen. Thank You Becky!
Thanks to this film I stared making my own bread. My kids like it a lot, so looks like it will stay with us for good. :-) The variations of this recipe are also very good. And what I love about it most, is how nourishing it is in comparison to the breads from supermarkets.

Looks beautiful, I read that artisan bread means the baker who baked it is an artist. Which perfectly describes you and those loaves. I too make bread with a "sour dough starter" I keep it in the fridge because I don't like the sour taste of starters keep on the counter top. So I tell people it's natural yeast. The way we were supposed to eat wheat. Before man made yeast in a lab so we could have bread faster. The yeast eats the gluten making it so we can digest it. Your instructions are so easy to follow thanks for this tutorial. I had to name my "pet" in the fridge so I wouldn't forget to feed him, lol.
Sounds like you have it down pretty good!! In case it was unclear in the video, after that first night on the counter, we do put our starter in the fridge. Totally agree with you, this is how they used to do it before industrialized bread became a thing. Thanks for watching!!
Started on a started yesterday evening, right after watching this video! I had a started 2 years ago and baked 2 breads with it, fairly succesful but with 3 young kids demanding full attention 24/7 forgot to feed it. I'm inspired to give it another go after watching this. As a german guy i put in the last raising stadium a few spices to the dough esp. fennel, caraway seed, and anise. If you give it a try, start with a low amount of the spices, and then adjust to your personell taste. And i agree with your statment the much longer on rest the better it will get. When i make bread i use only rye flower which makes a realy intense taste.
Just followed your instructions and baked this morning - LOVED THE RESULTS! Thank you for providing this information. The bottom of my loaf that I baked in the Marquette Dutch oven was very hard. What did I do wrong? I did preheat the pot in the 450 degree oven and put a bit of Spelt flour in the bottom when I added the dough.
So happy to see you trying the recipe! For the hardness issue, perhaps adjusting the oven rack height, and maybe taking the bread a few minutes earlier. The bottom of our loaves are hard, but not so hard we can't cut thru it. Might just be the nature of dutch oven sourdough 🍞
I am so glad you know that you don't have to throw it away. That's why I stooped years ago. I hated the waste. I'm still confused that EVERY SINGLE CHANNEL USES DIFFERENT GRAM WEIGHTS. Why. Does bread still come out ok ???

You can add orange juice as a substitute for part of the water and that will add to the rise and also help with the bitterness that some whole wheats have.. the bread is gorgeous!! good for you!!
my sourdough breads have gotten so much more satisfying since I have stopped "feeding" the starter, I only refresh it now after reading some baker's blogs. the difference is: you don't carry over all the old culture, you take a fresh glass, only 5-10 grams(!) of the starter, 50 grams of whole grain flour (of the same kind that the starter is made from, in my case rye, as my breads mainly consist of rye and spelt) and 50 grams of room temperature water. let that sit for 5-10 hours loosely covered, roughly until it has doubled in volume and transfer it into a new jar. now you have the ideal starter to bake a delicious bread from. ideally I do that once a week, but it will hold out longer. but the older it is, the less amount of old starter you want to transfer into the new culture, as it is aged and the enzymes have kind of slowed down. after refreshing, the starter should be full of big bubbles and smell sour, not sweet.
Get a drumstick (the musical type) cut off the striking pearl and sand down the end. Use that to mix your starter and dough. Metal knives and utensils can crack the jar

@@AmandaWoolsey I don't have a video on that yet. Sometimes we grind two gallons worth at a time for convenience of use. But other times we do it right before we use it. From what I've heard, it has the maximum amount of nutrients if you grind it right before use. We store the flour in the recycled bucket you saw in the video. All other grains we store in 5 gallon buckets with gamma seal lids. I used your code after the white chili video and got a Dutch oven from them and I love it! So beautiful and such high quality. Yes and yes :) One of them is the induction range, the other one is the electric range. We really really like them. Order yours now, cause it took ours six months to get here, sheesh!
If I’m letting it rise in a basket, I flip it over when I put it in the preheated pan. In that case I do not cover it. For if it’s rising in a loaf pan and doesn’t get flipped over, I cover it.

My starter was given to me by a friend, who said she got it from her friend who teaches sourdough classes, who got it from a guy in NYC that said it was several hundred years old. I've never let it die since I've had it and it's been eight years.
This was a great tutorial showing the ease of weighing using tare in addition to folding techniques. Like you I have difficulty digesting bread. I was able to get a starter from a friend, however, it isn't "sour" like I've had in the past and I notice I still have some digestion problems. Can you recommend a place to buy a legitimate sour dough starter? I am very inspired each time I watch one of your videos - actually have added another garden bed.
Lasts about a week before getting really dry and starting to mold. At our place, two loaves usually get's eaten in a day or two!! We bake a lot of bread :) We store it in a clear plastic bag in our bread drawer. Thanks for watching!
How much does your jar weigh? Is your jar a mason jar? You use equal amounts of flour and water so is there 150 grams of starter in the jar when you feed it?

I don't get why you weighed the jar before taking out some starter. After you've taken out some starter, isn't it the weight of the remaining starter in the jar that matters to proportion the water and flour you are gonna add to it to feed it?
Hello there Becky, I am just so excited to make my first sourdough bread! I received my Otis starter from Whispering Willow Farms and it is finally growing! I have a quick question....how often do you feed and (maintain) your starter in the fridge? Also, do you discard and feed it? And how much do you feed and discard? Thank you so much!
These two links will take you to making sourdough and refreshing starter. But since we are here, I will explain -- we essentially never go below 700grams of starter (including the mason jar weight). When the starter gets close to 700grams, we discard what is needed to bring it down to 700g, then add 150g of spring water, and 150g of wheat flour. Once you do it a few times, you'll get the feel for when your started jar is getting "close" to 700g. We don't grow our own yet... What we buy, we grind it using our WonderMill grain grinder. Had it for 15 years and it is still going strong!!

I started to watch 1-2 of your wonderful videos nearly everyday when taking a break as your videos are so relaxing and inspiring! So in addition to what I wrote below other videos let me add here that I made a healthy omlette with onions and tomato instead of going for the normal unhealthy treat and now I started my own sourdough starter - due to you inspiring me! Thankyou so much! Greetings from a German in Northeast India who badly misses good bread and who - like you used to - cannot digest wheat well. I am excited to bake once the starter is ready 🥖🥖🥖

Looks beautiful, I read that artisan bread means the baker who baked it is an artist. Which perfectly describes you and those loaves. I too make bread with a "sour dough starter" I keep it in the fridge because I don't like the sour taste of starters keep on the counter top. So I tell people it's natural yeast. The way we were supposed to eat wheat. Before man made yeast in a lab so we could have bread faster. The yeast eats the gluten making it so we can digest it. Your instructions are so easy to follow thanks for this tutorial. I had to name my "pet" in the fridge so I wouldn't forget to feed him, lol.
Sounds like you have it down pretty good!! In case it was unclear in the video, after that first night on the counter, we do put our starter in the fridge. Totally agree with you, this is how they used to do it before industrialized bread became a thing. Thanks for watching!!
Started on a started yesterday evening, right after watching this video! I had a started 2 years ago and baked 2 breads with it, fairly succesful but with 3 young kids demanding full attention 24/7 forgot to feed it. I'm inspired to give it another go after watching this. Really liked the sandwich version too!

As a german guy i put in the last raising stadium a few spices to the dough esp. fennel, caraway seed, and anise. If you give it a try, start with a low amount of the spices, and then adjust to your personell taste. And i agree with your statment the much longer on rest the better it will get. When i make bread i use only rye flower which makes a realy intense taste.
Just followed your instructions and baked this morning - LOVED THE RESULTS! Thank you for providing this information. The bottom of my loaf that I baked in the Marquette Dutch oven was very hard. What did I do wrong? I did preheat the pot in the 450 degree oven and put a bit of Spelt flour in the bottom when I added the dough.
So happy to see you trying the recipe! For the hardness issue, perhaps adjusting the oven rack height, and maybe taking the bread a few minutes earlier. The bottom of our loaves are hard, but not so hard we can't cut thru it. Might just be the nature of dutch oven sourdough 🍞
I am so glad you know that you don't have to throw it away. That's why I stooped years ago. I hated the waste. I'm still confused that EVERY SINGLE CHANNEL USES DIFFERENT GRAM WEIGHTS. Why. Does bread still come out ok ???

I'm always working on bettering my sourdough and I hardly ever see people doing them with whole wheats and having them have such a nice crumb and having them rise so high
Also- love your slippers, I wear the same kind around the house!
You can add orange juice as a substitute for part of the water and that will add to the rise and also help with the bitterness that some whole wheats have.. the bread is gorgeous!! good for you!!
my sourdough breads have gotten so much more satisfying since I have stopped "feeding" the starter, I only refresh it now after reading some baker's blogs. the difference is: you don't carry over all the old culture, you take a fresh glass, only 5-10 grams(!) of the starter, 50 grams of whole grain flour (of the same kind that the starter is made from, in my case rye, as my breads mainly consist of rye and spelt) and 50 grams of room temperature water. let that sit for 5-10 hours loosely covered, roughly until it has doubled in volume and transfer it into a new jar. now you have the ideal starter to bake a delicious bread from. ideally I do that once a week, but it will hold out longer. but the older it is, the less amount of old starter you want to transfer into the new culture, as it is aged and the enzymes have kind of slowed down. after refreshing, the starter should be full of big bubbles and smell sour, not sweet.
Get a drumstick (the musical type) cut off the striking pearl and sand down the end. Use that to mix your starter and dough. Metal knives and utensils can crack the jar

@@AmandaWoolsey I don't have a video on that yet. Sometimes we grind two gallons worth at a time for convenience of use. But other times we do it right before we use it. From what I've heard, it has the maximum amount of nutrients if you grind it right before use. We store the flour in the recycled bucket you saw in the video. All other grains we store in 5 gallon buckets with gamma seal lids. I used your code after the white chili video and got a Dutch oven from them and I love it! So beautiful and such high quality. I didn't want to spend the money on a le creuset and the lodge Dutch oven has a curved bottom which I dislike for my glass cooktop. Thank you for sharing I had never heard of the company before.

If I’m letting it rise in a basket, I flip it over when I put it in the preheated pan. In that case I do not cover it. For if it’s rising in a loaf pan and doesn’t get flipped over, I cover it.

My starter was given to me by a friend, who said she got it from her friend who teaches sourdough classes, who got it from a guy in NYC that said it was several hundred years old. I've never let it die since I've had it and it's been eight years.

This was a great tutorial showing the ease of weighing using tare in addition to folding techniques. Like you I have difficulty digesting bread. I was able to get a starter from a friend, however, it isn't "sour" like I've had in the past and I notice I still have some digestion problems. Can you recommend a place to buy a legitimate sour dough starter? I am very inspired each time I watch one of your videos - actually have added another garden bed.

How good is the bread for after making? How long does it last before molding. Is it best to leave it out or put away?
Lasts about a week before getting really dry and starting to mold. At our place, two loaves usually get's eaten in a day or two!! We bake a lot of bread :) We store it in a clear plastic bag in our bread drawer. Thanks for watching!

I don't get why you weighed the jar before taking out some starter. After you've taken out some starter, isn't it the weight of the remaining starter in the jar that matters to proportion the water and flour you are gonna add to it to feed it?
Hello there Becky, I am just so excited to make my first sourdough bread! I received my Otis starter from Whispering Willow Farms and it is finally growing! I have a quick question....how often do you feed and (maintain) your starter in the fridge? Also, do you discard and feed it? And how much do you feed and discard? Thank you so much!
These two links will take you to making sourdough and refreshing starter. But since we are here, I will explain -- we essentially never go below 700grams of starter (including the mason jar weight). When the starter gets close to 700grams, we discard what is needed to bring it down to 700g, then add 150g of spring water, and 150g of wheat flour. Once you do it a few times, you'll get the feel for when your started jar is getting "close" to 700g. Enjoy!!!

Can you convert grams to cups? Is it necessary to have a scale?
Grams are more accurate. Try measuring one cup of sifted flour, and one cup of tightly packed flour. There will be a difference in weight.
