Great video, a little tip I picked up from night diving for crays is to use a small glowstick taped to the top of your snorkel. Helps spotting buddies if their torch is out of view. Keep safe!
I used to catch these buggers in a tidal rock pool at one of my fishing spots on the Northern Beaches We would lure them out from the ledge with a baited hook and then whack a landing net behind them and just let em back into the net We wouldnt even get wet! We had fished that spot for years before realising what was under our perch !
Some of the principal's are the same but you'll find Victoria has more Southern Rock Lobsters. I haven't chased them personally. The rules and habitat will be different.

You said go high tide so you can reach spots don’t you mean low tide? Or do you recommend high?
You want a high tide, low swell. At low tide a lot of my holes don't have enough water to swim to.
