Best yogurt for curry is desi one with a picture of cow on it , can’t remember the name but it’s round tub , bowl size and you can only buy it from Asian shops. You do need to add water but some ppl prefer really thick consistency. I add dry red 🌶 Turka at the end and use Hing as it helps with digestion. His pakoras were nice and light , rather than nasty thick stodgy ones that have too much flour in.
