Fun fact the song Ständchen is a modern rendition of a classic 18th century song of the same name made Franz Schubert. If you play the two songs you can hear the similarities in the two works. Fun fact #2 is ebonhalz first name is Franz the same name has the artist who made the original Ständchen. Ständchen in its purest form is a love letter to musicians of old.

CC12 "Operation Basepoint" main-menu OST is CRAAZY, battle theme is awesome as well. I also adore all new OST's that came on CN server currently (Every ost from Tower of Babel event) + "Path of Life · Boss Battle Theme" are great. My fav OST of a character is probably "The Cure" of Silence the Paradigmatic.
Honestly I'm the complete opposite of you for Settle Into Ash. I think the chorus is great, but the rap section is what makes the song unique for me. Also the last chorus hits especially hard because of the rap precursor. Just my take though. Can't wait for you to discover even more of the music Arknights has to offer, I only expect your list of faves to grow lmao.
A few of my particular faves that haven't been mentioned yet: - Street (plays a lot during the story, it's melancholic and yet comfy at the same time wish it would be officially released) - Title theme (when I was installing AK and heard this theme I knew I was going to enjoy the game) - Inudi Harek Horakhet battle theme (CN's summer event and the battle theme goes so hard it's an actual bop) - Ensheathe (I'm biased because it's Mlynar's EP but the vocals are just so good) - Blade Catcher (Degenbrecher's EP I honestly adore the chorus)
So the way I got into the game was through finding a random picture of Muelsyse, proceeded to randomly get interested in her character, looked through her lore, learned she had a song. Morning Dew was the end of any reservations.
My favourite part about the character themes is the Lyrics, while highlighting the characters they also just have really fun and interesting lyrics that while not unheard are less common in the wider music sphere. tldr: I like songs about war crimes

Oh you'll find even more great ones, heck personally I feel like there's a lot of other underrated tracks(Both EPs and OSTs) as well even from the general community consensus. This is a really dumb theory that I thought up but ZZZ might have had the inspiration of making EPs for every new character release from Arknights EPs.
I kinda love that the only two reactions I've seen to the rapping section of Settle into Ash are: "Dang, I really like this!" and "Nah, the song would be so much better without it."" Not saying that's a bad thing, just find it funny.
I love how this is the one thing everyone and their mother agrees about when it comes to Arknights. They might find the gameplay boring, or the they might not care for the art/design, or the story might be too much or confusing to them, but the music always leaves a mark.

Creating good music is a big task, but creating music to express characters and events is a huge task. Arknight has a lot of variation music genres because they care about their character.

Theres a few event theme I really like, for example: both sui sibling lobby theme(especially the ling one), reed lobby and boss theme.
My favourite part about the character themes is the Lyrics, while highlighting the characters they also just have really fun and interesting lyrics that while not unheard are less common in the wider music sphere.
