How do you obtain this texture if you are not using any fat por puffing on the acai? I thought these mahcines can only create that texture if they had dairy or fat product?
It's true, your not going to get the overrun (air whipped in) that you would with a dairy product. You'll get thickness of the actual product, no different than blending ingredients in a blender.
You can find the exact recommended temperature in your models manual. This can vary slightly, but typically you want your final product be around 17-19 degrees. Your settings will vary depending on several factors like your mix formula, the ambient temperature in the room etc.
