Any ukwa that didn't done is called Asara Asa, meaning they used alom to remove the shaft when they were processing it, it makes the ukwa to swallow up so it will double in size, it can never done, or some go done some will not, whenever u are buying go for the smaller one that may look dirty I mean they still have the shaft in it, but u see those ones that looks neat and sharp na Asara Asa be that, no near that one at all.
Ukwa means more than a meal when presented to a visitor, it's a symbol of great hospitality, love, generosity etc, highly nutritional without fat or calories, it's highly recommended 4 pple who're diabetic, in many cultures they mix it with a cooked corn🌽 b4 serving, in some parts of Igbo land its a special meal to welcome Ozo titled pple like Chief Ofiafuluagu & Lolo G.O
Extraordinary highly nutritional food that takes a lot of work & time to prepare, There's a tree that bringsforth a giant round greenish 🧶🌳fruits (as big as a giant pumpkin)usually fall off when it's ripe, inside it are multiple thousands of brown seeds 🍃which're removed out of it in a special way, later cleaned & washed, dried up in d sun, later peeled, then milky colored UKWA seeds which is cooked & served as demonstrated here
I cook and eat porridge ukwa but I think I'm loving the ukwa without oil, it looks creamy and delicious. You really explained the whole processes so well. Well done 👍👍
I just cooked this today and it came out perfectly. Very soft with baking soda, and so much flavor. The only issue I have is that the top turned a black greenish color, when I covered it and left in oven. I am not sure why the color change? It still taste amazing. I have cooked this twice before, the first time it was not edible it was like tiny rocks and I cooked for almost 6 hours. Than I realized you have to soak dried ukwa overnight the second time i cooked it. The 2nd time it was edible, but it was still not soft enough and not sweet and seasoned really well. This 3rd time is the charm.only issue us color change mentioned earlier. Very expensive but worth every dime. As a matter of fact, you will not enjoy this wonderful meal, if it is not prepared well.I eas introduced to this a few years back and ever since I have been hooked.
Me I love mine anyhow, both white and porridge shebi na ukwa I dey for am 😂😂. You prepared it so well like ndi Anambra, very rich in protein, made for ndi ogo na ndi odogwu 😋😋
This dish takes long o but I bet it's worth it. I also cook beans with pressure pot and my husband doesn't eat porridge beans😁 so I do take his own out before adding oil and pepper. I enjoyed watching this.
