How would these cookies be of you piled the meringue on top of the cookie rounds? You could roll the cookie dough into cylinders, chill, make the meringue, & cut cookies off the cylinder. Never seen a biscuit like it. I wonder what substituting one third of the flour for cocoa would taste like? There are other permutations going around in my brain.
I think a third might be a little too much. The general rule of thumb I was taught was to start with replacing 10% of the flour with cocoa powder. This gives you chocolate flavor and color without effecting the structural integrity too much 😊
