I used to live on the 700 block of Mandeville St. in the Marigny and our backyard shared a fence with the Hubig's pie factory before it burned down. It was the house for the punk band, Sci-Fi Zeros and they would play shows and throw crazy parties there all the time (back before the Marigny turned into what it is now) and we'd always hook them up with mad barbecue when we'd have events so they would give us boxes... yes, BOXES of free pies. We lived off those things. I can't wait to make these. Especially the two best flavors. I'm kind of scared though because I'm pretty sure that yours are going to be better! We love you, Charlie! Your recipes will grace the tables and be passed on to countless generations of people who would otherwise never had the opportunity to learn these timeless techniques and secrets of true New Orleans cooking.
