You can fix tunnels in a square instead of just a line (if that makes sense. Like, click and drag a square with the Remove Tunnels option instead of dragging out multiple lines.) It just makes it a bit easier to make sure you fill in all the tunnels. I also thought you might like some insight to the food system. In the "Todo list", at the bottom, you can get a good view of your food system. Next to "Prisoners", there are a bunch of red and green lines. The red lines show hungry prisoners and the green lines are fed prisoners. If there are a bunch of red lines after meal times, something's off. Below that is "Meals". The tall green lines show how many prepared meals you have and the short green lines are meals that you have the capacity to make but aren't made. Ideally, you'd want as many meal lines as you have prisoners, and have as many prepared meals as you have hungry prisoners at the start of meal time. If there aren't enough meal lines, you need more cookers and fridges (2 fridges for every cooker seems to work well). If you have enough meal lines but not enough prepared meals for as many hungry prisoners, you need more cooks or possibly cookers (1 cook for every cooker and sink seems to work well). Hopefully that helps with the food issues you've had. I know it's probably the easiest thing to cause riots.

Adding a series of gates along the fence next to the road would drastically speed up the loading and unloading of the trucks. You could also extend the fence up to the top of the map and add in a gate there to speed up trucks arriving. Otherwise, That prison is looking nice.
A really great setup I found that prevents any escapes it to make a mousetrap-maze. You basically build a fence on the very outside of the map and leave a single square gap near one of your road gates. You then build a few lines inward so there is a bit of walking before they can escape and make 1-3 (armed) guards patrol in there. Prisoners will not dig outside the fence but rather pop right up once they are out the wall and then run towards your guards
Suggestion for you NL, go ahead and put a fence all away around your prison. It will cost you around $1,000 and it will really help prevent escapes. Right now if a prisoner tunnels out of the cell block they can run right off the map. If you put the fences up they will have to dig all the way to the fence allowing you more time to catch them. Good series mate!

At least another shower block about as big as the one you have, and you need about twice the canteen space you have at the moment. You need more appliances in your kitchen, too! Fridges and Sinks for every 2 cookers, roughly. And don't forget to get a dog out in deliveries, because it'll help you catch almost all the contraband coming in through food/item delivery. A Door control would be helpful for you, since putting servos over your fence gates on the road would speed up deliveries and mean a guard doesn't have to open them. They're also just ballin' as hell. Beyond that, your prison is lookin' good, man! Well... ok, it's visually a mess, but a functional one. Now we just have to wait and see how badly expanding too fast destroys it/alpha 26 ruins everything. I kid, I kid... well, hopefully I kid.
NL: when you're building new blocks, leave that staff door there and go into deployment and you can set the new block to be locked open while you're building it and all the jail doors will stay open and your workmen can move around easily.

Expand that max sec wing and open intake for max sec prisoners. You need some legendary prisoners there to spice things up.
