Dry brining is a simple method to make meat juicier and more flavorful. You rub it with salt and let it sit for a few hours or overnight. The salt draws out moisture, which then gets reabsorbed (chemistry: osmosis), seasoning the meat and making it tender as well as making the skin crispy!
Made 3 dishes today, using your recipes and they turned out great.. Your recipes are simple and easy to follow. Used this turkey recipe (it did turn out juicy), butter chicken Mac n cheese and garlic Parmesan mashed potatoes. Butter chicken Mac n cheese was a hit .. thanks for posting them!
That looks gorgeous! FYI if garlic gives you heartburn then you need to start to degerm your garlic. Cut them in half and take out that little green shoot. That little green bit is actually a sprout because garlic is shipped from all over . So unless you get it fresh from a farmers market or grow it. It most likely has had a long journey before it gets to your local supermarket where it then sits in a bin again ready to germinate and sprout because of the damp and cool conditions in the produce aisle.
I found using the plastic scoop from a rice coooker is brilliant for gently separating the skin from the turkey & also chicken breast. I have longish nails & even with gloves on I still bust thru the skin lol so the scoop is the go. That looks superb 😋

I made your turkey and I also made your macaroni and cheese. Let me say, I have received a request to do the same thing next year! I actually roasted the turkey in my oven and then finished it off in the smoker. I did that because even after spatchcocking it, the lid didn’t quite close on the smoker, so I didn’t trust it to cook it all the way through. it was so amazing! My parents have used Alton Brown’s turkey recipe for years and it’s a brined turkey recipe but it comes out very flavorful, juicy, and crispy. I’d highly recommend it bc they’ve always gotten compliments for how good the turkey tastes 😂
