      Anyway, I just bought the CC dlx 24 and just finished assembly, i haven't even turned it on yet, lol, Im really nervous as I know nothing about grilling or smoking. Ive always used a propane grill untul I tried some 45 dollar a pound brisket, it almost melted in my mouth. I knew then ive been settling for average and it was time to up my game.     You need to turn the point to keep cutting across the grain of the meat. It is a separate muscle.

    Don't toss the fat. Render it down, put the tallow on your brisket when you wrap it in the butcher paper.

    Do I have to wrap it in butcher paper?

      No, but it will take longer to finish. You can use aluminum foil to make it even faster, but you will sacrifice a lot of the good bark.

      Everyone loved it. I am not a brisket guy personally, but I had to make one. You can cook anything if you put the work into it.

      @@FracDaddyBBQ I was going to, but I had apple in the hopper and ran with it. I was feeding people who don't eat much smoked meat and I wanted to keep it mild.

    Looks delicious! I hear you on handling hot meat off the grill. I use a tip from another YT guy... get some thin cotton glove liners and wear then under your nitriles. I get mine at Harbor Freight. It's a game changer. 👍

      I do need some. I have insulated silicone grill gloves, but they are kind of bulky and slippery.

    Looks like filet knife your using? You know any hunters be gr8t for bear hunting that fat bring in black bear. Holy crap the pellets were hardly used that is amazing.
