This is a gr8 video on intro & prerequisites to iOS.
Regarding the query on supply & demand, I think some big companies are aggressively going towards adopting cross-platform solutions just to cater to cost... but by doing this, I think they are seriously compromising on apple user experience and in some cases security. Lets see how this space works out. If you ask me, I will always suggest to develop apps in respective native technology.
