Thanks for the question. Steam is water converted into vapours. When you cool it, it forms water droplets. Whereas hot air is just air with no water content. In spray drying we want to dry our product completely to remove moisture from it. So, we use electrically heated air in spray drying.

Well that depends on the product you are drying. It should be sufficient enough to dry the solvent of a droplet before it touches the wall of drying chamber.

Molasses are viscous right? If it is sprayable than it can be dried.

Exact temperature I won’t be able to tell but just keep in mind the temperature should be below the degradation temperature of the molecule.

Because more the temperature, more will be the evaporation rate of your particles. Hence more moisture it will give.

If the solvent evaporates at that temperature than you can do it. Keep the feeder rpm low.

Both can be simple air.
Filtered air heated to a certain temperature.
Compressed air.
