Mark, that's such an interesting observation about your "mistake". I also sorted for color during competition, but didn't during practice. I kept saying, this roast tastes different, but it's probably because I over-sorted lol. Congratulations again on podium! Hope to see you again next year.
For some reason, I didn't sort in prep which I probably should have.
Didn't realize i could over-sort coffee too so it was definitely a learning experience.

Onyx built a cathedral to coffee. I’ve only experienced two shops that feel this way, Onyx and Sweetbloom.
Found it very comforting how nearly everyone struggled initially to bring forth the best out of the coffee. Fun challenge!
