I also get to forget some answers during actual viva and many times I cannot explain conceptually to the interviewer even if I am aware of the concept. And then I can see expression on his face that even after completing post graduation and certification why he cannot understand the concept.

it feels more of route learning and memorising facts and information and just throwing it out when someone asks, ironically i personally take interviews and stop asking questions which are getting asked for years , its all about effort, interviewer should also put effort in asking questions apart from routine questions only then the candidate will be encouraged to give answers based on their logical thinking and reasoning, more bad nobody does so
In the question you asked not to use the inbuilt methods but she used [stringName].length() in the for loop if she can use that why need to run a for loop she can just print [stringName].length() as this the answer..

I think we can't achieve, so for accessing private variable we have to use getter and setter
