Frying oil becomes dark due to burnt particulates, it does not always mean it is old or polluted.
You can strain the oil to filter out the particulates.

Look up the recipe for 'hing er kachori' on TH-cam. The filling is made of a kind of lentil, asfoetida and ginger. The dough is made of plain flour tempered with oil or butter and water. It is fried in vegetable oil

Its cheap.. Great but look at the ingredients they're using especially the oil. Lol.. That's gutter oil.. I would pay 100Rs for piece as long i know the ingredients are clean and the preparation is hygienic.. not this way..
100Rs maybe too much for a poor person to afford. But I understand what you're saying, it seemed like a couple of pooris weren't fried all the way through when he took them out of oil

These people are not even regulated by Government standards.. so i expect that their preparation and ingredients are unclean and unhygienic.. as i said, i would pay an expensive meal as long i know the food has been prepared hygienic and clean.. i wouldn't trade my health on cheap foods.
There are option available for 100rs as well, go to places according to your need.

Don't worry its hygienic I myself have seen the whole procedure of preparation. They cook just we cook at our home.
this is an example of disguised unemployment , there is no need of three people as i can see , on ecan perform some other job and help his family much better financially

You can have access to here by simply 2 ways. One is from kankinara railway station and the other one is from shyamnagar railway station. You can take an auto rickshaw or bus to reach the destination you just have to leave the bus or auto at 4 no gate or jagatdal police station. This stall is just 100 metres away from the police station.
Tip- ask for extra curry it will taste delicious
