      This is not kachapuri though its Adjarian kachapuri big difference, regular kachapuri is more like a stuffed flatbread with mainly cheese but there are other options like potato or bean filling

    The best part of Khachapuri is there are so many regional varieties. The recipe shown is Agarian in the west of Georgia, and there's so many versions

      See my comment. If you like kitchen experiments, kefir has yeast, is from the region and can be used to make bread. Sugar will feed water kefir, milk powder will feed milk kefir/whey. Really a fun experiment. I have the grains, so it was natural.

    I'm Georgian and I could not have been happier. But there's one thing: we do not stuff the crust with cheese. It's crispy on the outside and fluffy inside bread and we dip it into cheese. Also it requires just the egg yolk not the whole egg. But omg, actually seeing this on this Chanel is freaking awesome! Love you Chef John

      @@pening6 That's not really true. Most of the places in Adjara put the whole egg, tho I usually ask for 2 eggs, 1 whole and 1 only yolk

      ncuXoguHo4ka Yes, I did. Mine came out slightly darker than Chef John’s did, but mostly that was due to my leaving them in there a little too long. I was trying to get the eggs just right. Use Grass-fed butter if you’ve got it. Tasted much better.

    I went to this country last december and it was so great and the most remarkable food was khachapuri, it tasted so dang good! like the cheese mixes well with the bread and the egg gives a rich flavor to it!

      Funny fact: this pastry comes from Adjara region of Georgia, where people are very slim. I felt like a hippo there, and I am not even overweight.

    To be precise, this is Adjaruli Khachapuri which belongs to a Adjara region, south-west of Georgia, close to Turkey.
    They have another one called Imeruli Khachapuri, which belongs to Imereti region, west of Georgia, also very good, probably even more balanced on ingredients and even-baked-ness!
    But the king of them all, is Kubdari, which belongs to northern part of Georgia, Svaneti region. I think the real recipe is kept as a secret there, because Kubdari made in other parts of Georgia tastes terrible! Check that out if you visit Svaneti region.

I searched Adjaruli and Imeruli on TH-cam and found a channel, Georgian Cooking with Nino, where she has English language video recipes for those, and a couple other different types. I made the Adjaruli Kachapuri last night from this video, and it was amazing lol. And I plan on trying out the other varieties from those videos when I make it again! :)

    While in Moscow visiting friends, we went to a Georgian restaurant - it was amazing!!! We also found a burger stand serving Georgian style burgers, we still talk about all the Georgian food we had two summers ago! I really want to go to Georgia 🇬🇪 now!

    Thanks for sharing one of the delicious Georgian dishes recipes. Georgian cuisine is truly rich. It can satisfy all the people with any dietary preference or restriction: keto, paleo, vegan, gluten and lactose intolerance, you can find tasty food for everybody. There are many healthy and ancient recipes too :) Your version of this recipe is very healful for Georgian emigrants too. (Substituting Georgian cheese is really difficult).

    Not going to lie, this recipe quarters perfectly (ie cut the dough into 4 equal parts instead of 2). the only thing i would add is that if you cut the dough into quarters, add the egg at the 10-12 minute mark and then continue to cook to 15 mins. this recipe cooks perfectly quartered at 15 mins with out an egg. if you add the egg at 15, you will over cook the bread.

    Chef, I've only witnessed Khachapuri without baked egg. I mean as it comes out from a piping hot oven, you crack an egg in there and serve it. Then "the diner" takes cutlery and mixes this egg with the hot cheese inside, which makes it into a runny cheesy scrambled egg. At least this is how I have always eaten it. Very nice recipe btw, i am definitely going to try your recipe on quarantine

    There 3 types of khachapuri depending on the region of Georgia, this particular one is Adjarian, boat shaped with egg, but all are amazing.

    This has many names in different countries. The most well known of this is Peynirli and it's very famous in Greece and Turkey as well in many Balkan countries. The one you choose to make here is the least known but it uses exactly the same ingredients and procedure.

    I diced 4 oz of kosher salami or pepperoni and added it to the cheese rolls but not in the center, plus subbed extra sharp cheddar for feta. I get nagged for this daily by my family and whenever people are coming over they ask if I’m making these. I do the egg wash, and use Kerry gold butter instead of olive oil. . My boys get hall of one on game nights if they come straight home after. It’s a,ways what they want to eat before bed on a school night. You cannot imagine how wonderful these are. For those who prefer a harder egg, nuke it 15-45 seconds before adding it. Our family likes them runny, but not everyone does.

    You did great job as Georgian I approve it, only thing is it’s called Adjaruli Khachapuri (Adjara is Black Sea coast region that’s where it’s from Khacho is Type of Cheese and Puri means Bread)
    Much respect as I love your channel and I cook lots of your recipes I’ll baked this your way, as I do it almost as you did just slightly differently we also use chili instead cheese which I’d love to see you try, Thank You! 😍❤️

    Russian stores in San Francisco carry the requisite Sulguni cheese. Greek Halloumi is an excellent substitute too.
