    Ultimately it is the parents responsibility to teach thier children about food health and wellness, financial responsibility and how to conduct yourself in life. School education is one thing and life education is quite another.

      I disagree. It’s financial institutions responsibility to teach children about financial responsibility, supported by parents. Similarly, parents can only teach kids what they know, so you never break the education cycle if it doesn’t become the responsibility of schools, government, and other institutions.

    Great video! It’s so important to learn about finances when you are young. Also, Charlie said he missed out on 4 years of getting credit history from his phone installments since he was 14 but actually he didn’t miss anything since in order to sign a legal binding contract you have to be 18 years of age generally.

    Chill the dough in the fridge for about 30 min before baking so that the butter solidifies again and they will be great!! The thicker you want the cookie the more time you chill it 😊

    Josie I’ve have just been catching up with your vlogs due to daily life commitments this last week and let me tell you something from a woman to a woman: you are such a intelligent and cheerful and tasteful person! I always learn lots with you and Charlie! I’m enjoying all the farming discussions because my dad was a farmer until I was 8 years old and unfortunately we lots the farm due to financial issues that we just couldn’t sustain anymore. I have very good memories from those days and is something that I will always support.
    Also if you ever doubt yourself because you don’t have 1 million or 2 million followers like other cool girls, please don’t ever feel bad about it because you content is relevant, is interesting, so well structured and inspiring and positive…I mean just talking about the Financial Times articles and the importance to of reading accurate and scientific researched content is so inspiring! you bring a lot to the table so please never stop being you! I adore you both and I’m also a countryside person! So cheers to you both sending you lots of love from Yorkshire ❤❤️

    For the cookies - - Add more flour and chill in the fridge for 30 minutes to firm up the butter. That's why they taste just fine but went flat. Don't despair! You are getting much better at baking. 😀

    Fabulous video ! It is so important to pay attention to your finances when you’re younger. Amazing how quickly you age and your kids grow and go to college. It really happens in a blink of an eye. We invested in real estate (my old job outside of music industry) and stock market. Always had more then one pension, 401K’s and side retirement plan per person too. My husband wants to retire early and we are able to do that with no mortgage. Makes me nervous but, we can and he is next year. Life is too short not to live well, whatever that means to you! Live for you! 🎉

    I really like the dynamic between you and your husband, especially when he’s rambling about something, and you give a bit of “mm” “yes” but continue to encourage him to talk as you listen to him.     We have homes schooled our son for these reasons and others. He was in school before the pandemic and during lockdown we realised a lot about the schooling system and what children do and do not learn during their time at school. It really opened our eyes and now we are teaching our son some “traditional” school lessons as well as about money, stocks, finances, how to grow food, he has his own vegetable bed on our allotment plot, we are also teaching him the importance of looking after your mental health as well as physical health. So much of this is not taught in school and I do hope this changes for future generations. It’s people like you guys that will be able to help do this❤

    When you spooned the cookies out I knew that might happen. The dough was too runny, more flour, the scoop size was three times too big. Plus I’ve learned, the hard way, to chill my dough to prevent too much spreading. I’m 78 so lots of failures to learn from. I agree the dough is the pest part. One hint I can give from a far is get proper measuring spoons and cups. A table “table spoon” and a measuring table spoon are not the same size. Just keep trying. A good site is The Preppy Kitchen and Cupcake Jemma.

    Agreed! News is so sensationalized these days. I’ve been so discouraged by reading the news. It feels like news providers (on all sides) don’t care about accurately presenting you with the current events of the day/week, but instead printing eye-catching or hyperbolized headlines to make more money.

    What a very informative vlog! I rushed to my pension and to my luck my company actually put in more than what I do, so I'm upping my pension and use it to my advantage. I must of been very lucky because the school I went to did actually teach commerce we even learnt how to right cheques out back in the day.

    A nice thing about North America is that we have another "pumpkin" holiday before Christmas -- Thanksgiving. I keep up harvest schemes decoy up until late November. The weekend after the holiday, which always falls on a Thursday (I think Canadian Thanksgiving falls earlier than here in the US), is perfect to pull out the Christmas decor! Actually is my favorite holiday weekend of the year!

    I 100% agree with Charlie, when staying in a lovely holiday home supplying basics such as toilet roll and dishwasher tablets is a simple thing to do but makes all the difference! I recently stayed somewhere in Norfolk that was beautiful BUT we had to buy toilet roll and hand soap for the kitchen/bathrooms it just took something away from the experience. Strawtop is stunning it’s on my list of places to visit x

      I said the same thing! 😁 Most cookies are dropped by the heaping teaspoon and will yield at least 2 dozen cookies.
      As long as they were good, that’s what counts.
      Josie, I have been baking for years and yet I still took cornbread muffin TOPS to a church social last week instead of cornbread MUFFINS. They all stuck in the pan. 🤦🏻‍♀️ Give yourself grace, but do thoroughly read the directions before you begin…again, this is experience talking…🤪

    You out stripped Madonna with the interestingly placed pumpkins 😂 We have a seasonal change over with many many things tucked away in the house that are brought out every year for each season. It makes you feel as if you've redecorated the house. Change the curtains few different vases etc...blankets and cushions. Changes the energy in the house. Try sudocrem on your finger Josie .. honestly it's the best cream for poorly skin. Much love 😘

    Josie...you can use a small icecream scooper to have small and even size cookies. Also, cookies spread as they bake. So if your dough is right they will expand equally and definitely needs to be placed far part from one another 😊

    Hi Josie, I just want to say I know you love your Thermo mix, but a handheld mixer or a stand mixer is your best bet for making really good baked goods. When incorporating dry ingredients, and wet ingredient, it’s important if they don’t become whipped which adds air to your recipes,

    I love old leather and have an old leather settee - rounded and very heavy from the 30's probably and my dog has it as his own but I love it and you can wipe it down on arms etc and it keeps him cosy and happy. It is sprung with huge springs and horsehair in the cushions which I have added to as they were getting thinner.

    I had a fixed mortgage payment for a year and this year it went up a few $ and will do so for two more years and then it will remain the same. Fixed mortgages are the best but then reality hits you in the face. I love the cottage updates, you should definitely show more from the reno

    Chill the dough in the fridge for about 30 minutes and you may want to add a bit more flour. Also use a smaller amount of dough for each cookie. Maybe a small icecream scoop or 2 tbsp per cookie.

    Josie & Charlie~ Fantastic vlog...money wisdom, kitchen delights and Strawtop I & II. I would be very torn between the two cottages. I think I would stay a few nights at both, if possible. The Aga is so nice!!!! Everything is really well done and thought out. I have meant to ask if you would be open to giving pro/con about the Thermomix. I love what I have gleaned thus far but it seems that mostly you use this for smoothies, Parmesan, nut butters, blending mixtures but have not seen you actually 'cook' with it since a dinner party years ago. I love the ability of it but wonder in daily life... would you buy it again?? Thank you for any input, it is on my list for holiday this year. xoxo

    If I use melted butter the same thing happens to my cookies! I have to use room temp butter for them not to spread. I've done it in my thermomix too and it tastes amazing.

    josie, I'm not an expert in cooking but rather a big eater, the trick with these cookies is to put them in the freezer for 1 hour and then bake, another great video, thanks...

    Butter makes cookies want to flatten out. Shortening or lard cookies keep their shape better. Also, put cookie dough in the freezer/frig the day before baking.

    Interesting conversation with your financial planner. Sounds like retirement plans in US and UK are similar but mortgages may work differently. It sounds like after 5 years you are basically required to refinance? In US the property would typically be paid off at the end of the mortgage period - unless you chose to refinance for a longer term part way through. High school students in California are required to take an economics class to graduate. A few schools also offer personal finance classes but not all of them - they all should. Good kids book to learn about compound interest is “Rock Brock and the Savings Shock” - maybe a good gift for the nephews?

    Brilliant vlog. I’ve loved the last few and learnt lots. Been so interesting. I could talk figures with Toby alright 😊. My will and my funeral expenses I am going to sort out to save my son having to sort it all out and ensure my pension from when I worked has my correct address etc. I’d leave the wooden panel in the top bedroom at cottage 2 it’s stunning with the lights. Kitchen sink is stunning. Oh and don’t put a mirror on the fire place, it’s lovely on it’s own a great statement piece. Sorry josie but I had to chuckle when I saw your cookies, bless ya. Xx

    Pumpkin spices are a mix of typical spices you'd add into pumpkin pastries and dishes such as pumpkin soup and pumpkin pie :) Usually there would be nutmeg, cinnamon.....etc.!

    My daughter and I do not follow the news and my youngest doesn't have time with 2 small children as it can bring you down and like you we feel it is done for the headline not the fact. Since Covid I do not watch any and you see the odd feel but there is enough to handle in your own life without worrying about the problems of the world. Financial Times does sound good and I would rather read something factual than fake news.
