For example, the production on Nwa’s record “quiet on tha set” is traditional hip hop all day, but Dr Dre’s let me ride is a completely different beast.

Producers like Spanish Ran, Nicholas Craven, Sadhu Gold etc etc where the focal point is the emcee

Everything has it's purpose. Some flows fit better on boombap. To be fair, you probably heard a lot of mid boombap beats. And most of these modern "lofi" beats don't do it justice either.
