  • How to roast Pork Belly in a Weber Kettle using a rotisserie and basket accessory to create crispy pork belly but there's a catch....
    I'm calling this the game changer and showing you an easy step to creating the most succulent, juicy and tender pork belly to go with that crispy pork crackle.

    1/2 cup of dark brown sugar
    1/4 cup of salt flakes
    2 tbsp of smoked paprika
    1 & 1/2 tsp of cumin
    2 tsp of onion flakes
    2 tsp of garlic granules
    1/2 tsp of cayenne pepper

      Hey Arthur Stock, just prop it up with some foil underneath it (make a golf ball sized piece of foil and place it in the very center of the pork belly underneath it). It is mainly to stop any juices pooling on the skin and stopping the crackle from forming. 🍻

    If the pork belly had been hung in the butchers fridge for a few days, did you put it in the fridge for the tomato sauce to marinade the meat?

      That's correct Aaron Miller, the acidic levels of the tomato act as a tenderizer and by soaking only the meat in the tomato based sauce, the meat when cooked is so tender and juicy. Cheers mate 🍻
